Grab and Go Veggie Muffins! Perfect for Sneaking Vegetables Into Your Diet

Healthy eating is one of those things that I feel like we are always striving to improve. With kids it can become especially difficult as they tend to be pretty picky and adverse to certain foods, especially vegetables. Both of my kids have always been pretty good eaters, but when it comes to veggies, we always seem to stick to the same few staples: corn, peas and carrots — always served the same way…steamed (boring)!

When I heard about Garden Lite muffins, I was so excited to give them a try. These muffins are the most perfect way to sneak some veggies into everyone’s diet. Each muffin’s main ingredients are veggies, in particular, carrots and zucchini. At only 120 calories each, they are a perfect option that you can feel good about. Are favorite flavors were the chocolate and blueberry oat, but there are so many different options to choose from! Garden Lite has so much more than muffins too: cornbread, bakes, mac n cheese, souffles, waffles and beyond!

They completely passed the toddler and preschooler taste test! They gobbled them down, none the wiser to the fact that they are loaded with veggies! Mom win! I love the ease of throwing them in my purse or diaper bag when heading out the door and having a healthy food option while out and about. They keep everyone’s tummy happy with a great taste, provide fiber to keep us full longer and are super convenient.

    We are the same! My little guy always loved his veggies, but we always make them the same way too! I have never tried these but definitely will search them out next time I do groceries! Thanks for sharing!

    What a great concept. Have you found any recipe to make these on your own?
    One thing we do to sneak vegetables (cauliflower) into our son’s diet is to make cauliflower pizza bites. Just a suggestion!
