Spicing Up Lunch | Sriracha Tuna Egg Salad

Lately I’ve found myself getting into a rut and eating the same thing for lunch day after day. Lunch time tends to be the time of day when I get most of my blogging work done so I need to take advantage of every minute possible. Our toddler takes a nap around that time and usually my oldest has a little screen and quiet time which allows me a small window to work on writing and everything else on my never-ending to-do list. Planning an elaborate lunch just isn’t in the cards so I’m always on the lookout for simple, but healthy and fulfilling lunch options.

I’ve been loving all the new StarKist Tuna BOLD varieties for simple, but super satisfying lunch options. Today I’m sharing a super flavorful creation using BOLD Sriracha on this spicy twist of your typical tuna egg salad. Whether you serve this on romaine lettuce leaves, throw it in a pita, rice crackers or eat with crackers or veggies, you’ll definitely add a big kick of flavor to your typical midday meals. This salad is loaded with lots of lean protein, veggies and low calorie too. Also, you can easily vary this recipe by using the different flavors of StarKist BOLD tunas as well!

Sriracha Tuna Salad

Ingredients
  

Salad Ingredients

  • 1 pouch StarKist BOLD Sriracha tuna
  • 1/2 cup veggies combination of diced red pepper, diced cucumbers, diced celery, julienned carrots
  • 1 eggs hardboiled and diced (I prefer without the yolk)

Optional

  • crackers
  • pita
  • romaine lettuce leaves

Instructions
 

  • Mix tuna, veggies and hardboiled egg together.
  • Serve with crackers, atop a mixed green salad or in a pita with greens.

    I’m in the same boat with a napping baby and toddler “quiet time” right around lunch and I’m sick of my “fast and easy PB&J,” ha. I’ve tried Sunkist Bold pouches before and they are good, thanks for this reminder that they exist! A good start for getting out of my lunch rut. šŸ™‚
