30 Minute Creamy Chicken Chili
- 2 cloves garlic minced
- 1 onion diced
- 2-3 cooked chicken breast about 3 cups; diced or shredded
- 1 7 ounce can green chiles diced
- 1 14 ounce can diced tomatoes
- 2 16 ounce cans BUSH'S Mild Kidney Chili Beans do NOT rinse
- 1 cup frozen corn may substitute with drained canned corn
- 12 ounce low-sodium chicken broth
- 1 Tbsp chili powder
- 1 Tbsp cumin
- 1/4 tsp salt
- 1/4 tsp oregano
- 1/4 tsp paprika
- 1/4 tsp black pepper
- 4 ounce reduced fat cream cheese softened and cut into small cubes
Add drizzle of oil to large pan over medium heat. Saute onions and garlic until transparent.
Add all remaining ingredients except for cream cheese to pan. Simmer for 10 minutes of medium-low heat and stir occasionally.
Reduce heat to low and add cream cheese. Mix often until completely melted into chili. Top with desired toppings (jalapenos, avocado, cilantro, tortilla chips).
