Phew! Why did no one warn me how crazy and intense the first few weeks of school are? This is the first year of both my kiddos being in school and the morning hustle to get everyone out the door feels like a whirlwind somedays. From the moment we wake up it’s go, go, go!  I feel like I’m always rushing to get everyone to the school bus or dropped off, hustling to finish last minute work and errands and by the time lunch rolls around all I want to do is find something easy and quick to eat.

Instead of ordering food to-go or popping through the drive through, I’ve been keeping a few quick and tasty options available to pop in the microwave or oven when I need a quick meal. I love cooking most days, but lunch is definitely the meal that I tend to just shrug off and will often eat whatever is quick and available (which is usually less-than-stellar options) so having easy meals stocked is a must! These are a few of my favorite frozen meal options that are packed with flavor, satisfy and keep me going all afternoon long.

Evol Portabella & Goat Cheese Ravioli

I’ve been trying to be a bit more mindful about my meat intake and love participating in Meatless Monday when I can. Evol Portabella & Goat Cheese Ravioli is such a great fast and delicious vegetarian meal (with nothing artificial in it)! My husband is a huge mushroom fan, so when he saw these stocked in our freezer he was all over it.

These delicious raviolis are stuffed with portabella mushrooms, goat cheese and romano & ricotta cheese (plus other yummy veggies like crimini mushrooms, red bell peppers and more) and covered with a decadent creamy basil sauce! Needless to say, cutting back on meat is easy when it taste this good.

Healthy Choice Grain Free Power Bowls Spicy Black Bean & Chicken

I love power bowls and this one combines so many flavors that I love! All-natural chicken breast is served alongside black bean and veggies on top of riced cauliflower with a spicy chili sauce! This low-carb bowl is a great source of fiber (5-7 grams) and protein  (18-20 grams)which is so helpful for powering me through the afternoon so I don’t feel like snacking all day, plus it has tons of nutrient-dense veggies to help me reach my vegetable intake too.

    Those look great! I love easy meals that are good for me that I cook up quickly. I am so busy during the day that I often go for less healthy options.
