I love the convenience, how quickly they can be made and how there are so many options to mix it up to meet whatever craving your are having. For this recipe I used hard boiled eggs, low fat greek yogurt, and yummy turmeric spice all of which have lots of great health benefits! Turmeric egg salad is perfect for serving on bread, with crackers, atop a salad or even just eating by the forkful. The protein keeps you fuel longer while providing a sustainable source of energy and is especially great for a post-workout refuel. Turmeric is a powerful spice that is believed to help boost your immune system and has anti-inflammatory properties. Low-fat greek yogurt has less calories than typical sandwich spreads and adds a tangy twist as well.

Most weeks, I make a big batch of hard-boiled eggs in my Instant Pot (hands down the best way to make eggs that taste great and are a breeze to peel) or if in a pinch you can purchase them already prepared at the deli of your local grocery store.

Ingredients
  

  • 4 hard boiled eggs diced
  • 1/4 cup greek yogurt
  • 1/2 tsp turmeric spice
  • 1/4 cup red onion diced
  • 1/4 cup celery chopped
  • 1/2 tsp mustard
  • salt and pepper to taste

Instructions
 

  • Mix all ingredients together until mixed well.
  • Can be served over leafy greens, on bread as a sandwich or on crackers.
