It’s no secret that there is some major avocado obsession going on and for good reason! Avocados smooth, creamy texture and mild taste makes it a perfect food for everyone in the family. When both of my children were babies, avocados were one of their first foods due to its baby friendly texture and taste. As they’ve gotten older, it’s still one of our must-have foods that we always keep stocked up in the house. The creamy fruit is full of healthy fats, nutrients (including vitamins and minerals), fiber and phytonutrients that are so important for adults, children and especially toddlers!

We love how avocados are super adaptable for every meal through your day, including snacks and some pretty delicious, refreshing drinks (more on that later…). Adding a little avocado to your meals is such an easy way to pump up the nutrients and health of your meals. We always keep a few around to add to our meals.

One helpful hint: store avocados in the fridge until a day or two before you are ready to use. It will slow down they progression of ripening and prevent them from becoming too mushy or overripe.

Chipotle Avocado Stuffed Cherry Tomatoes

Healthy Avocado Chicken Salad

This super simple salad is so easy, yet so tasty! Avocado is used to replace the typical mayonnaise that is used in chicken salads and gives this recipe such great flavor and makes it such a healthier option! The addition of grapes/apples, gives a sweet punch of flavor that complements the other ingredients so well!

This salad can be eaten alone, served on toasted bread, a croissant, in a whole wheat tortilla or served atop a spinach salad.

For a twist, prepare with the addition of chili powder, cumin and paprika for a Mexican twist!
