We’ve been dealing with a super picky toddler lately. Trying to get him to eat any veggies aside from peas and corn has been nearly impossible. Lately, I have been trying to be a bit sneakier about veggies and hiding them in his foods, but often that means taking more time and effort with only so-so results (somehow he still notices them even when we can’t). And don’t even get me started about snack options! I’ve been striving and trying so hard to improve our snack options to have more veggies and it’s been a tough battle. When I saw Garden Lite Muffins in the freezer section at my local Kroger, I had to give them a try and am so glad that I did!
Garden Lite muffins are delicious veggie rich muffins and one of the easiest ways to get additional veggies into my families diet. Each muffin is only 120 calories, 3 grams of fiber, low fat and are packed with vegetables! The first two ingredients of these muffins: carrots and zucchini and you would never know it based on the taste. They have three flavors to choose from: blueberry, banana chocolate chip, and chocolate. Definitely and easy and tasty way to each your veggies.
I love that they are easy to take on the go; I simply throw a few in my purse or diaper bag and head out the door! Simply let defrost from the freezer a few hours and enjoy (although they are the best when served warm!) Our favorite is definitely the blueberry and we love using them to make blueberry parfaits!

Interesting idea! I’d never thought to make a parfait/trifle with crumbled up muffin, but it sounds really yummy!
Hehe, I like how carrots and zucchini are “hidden” in these yummy-looking muffins! Good for kids as well as adults, for an adequate daily fiber intake.
