Raise your hand if you’re a breakfast obsessed foodie? Whether it’s breakfast, brunch, lunch, brinner or dinner, breakfast is my jam! Something about breakfast foods is so satisfying and always sounds good no matter when or how, especially when I pair it with my constant 24/7 companion, coffee.
I’m sharing one of my newest breakfast favorites in celebration of Hispanic Heritage Month (September 15 thru October 15). This latin-inspired breakfast is packed full of flavor, super satisfying and quick to make.
Flavorful and spicy chorizo, roasted red potatoes, eggs and a smattering of delicious toppings make this one-pan meal an instant hit. Cooking it completely in a cast iron skillet gives this hash a delightful browned and roasted flavor that you can’t replicate with other pans (if you don’t have a cast iron skillet, get one — a definite kitchen must). It’s the perfect quick meal when entertaining others that doesn’t take a lot of time or effort which allows you to enjoy precious time with family or friends.

There’s just something special about sitting around a table and enjoying a good meal and cup of coffee around those you love. I’d love to start a tradition of a weekly brunch date with friends to stay in touch a bit more. Life is so busy and crazy that at times, I find that weeks to months can go by without seeing those that we love.

I’m totally a milk and sugar coffee kind of gal, so finding a coffee that has robust enough flavor to still withstand all the additions is a major plus. Plus once that caffeine kicks in, mama gets productive (and cooking)!
Egg & Potato Chorizo Hash with Pico de Gallo
Ingredients
Main Ingredients
- 1 yellow onion diced
- 2 Tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp chili
- 1/2 tsp cumin
- 1 4 ounce can of diced green chiles
- 1 pound chorizo
- 4 cups red potatoes diced
- 5-6 eggs
- 1/2 cup shredded cheese sharp cheddar
Toppings
- jalapeƱos sliced
- cilantro chopped
- avocado sliced
- pico de gallo recipe linked below
- lime
Instructions
- Heat a large cast iron skillet with olive oil over high heat. Add onions and spices and saute until onions are translucent (3-4 minutes).
- Add chorizo and green chiles to the pan, stir and cook for 5-6 minutes until chorizo is browned.
- Reduce heat to medium and add the red potatoes to the pan and stir to mix. Pour 1/4 cup of water to the pan and cover with a lid to steam the potatoes. Uncover and stir occasionally to loosen cooked on bits of food.
- Once potatoes have softened and browned, make shallow divots for the eggs. Crack eggs into divots, cover and continue to cook for another 3-5 minutes (you want the egg whites set but yolk runny). Sprinkle with shredded cheese.
- Serve and top with desired toppings.
