Did you know there was a National Mashed Potato Day (October 18th)? Me either until yesterday! Mashed potatoes are a huge favorite in our house and a total comfort food for me. Now that the weather is cooling down, I find myself craving them more and more.  Even better, they are super simple to make and the whole family likes them so it makes dinner time that much easier.

One of my favorite ways to make them is this simple and quick recipe for cheddar and sour cream mashed potatoes!

It’s super savory and completely delicious. In less than 15 minutes you can have this prepared and ready to eat so it’s perfect for a quick weeknight dinner. I love serving it with roasted chicken or pork chops.

Cheddar and Sour Cream Mashed Potatoes

Simple and delicious mashed potato recipe that's ready in less than 15 minutes.
Cook Time 15 minutes
Total Time 15 minutes
Servings 8 people

Ingredients
  

  • 4 cups Prepared mashed potatoes
  • 1 cup Shredded cheddar cheese
  • 1 cup Sour cream
  • Chopped chives optional

Instructions
 

  • Preheat oven to 350.
  • Prepare mashed potatoes are directed on box (you want about 4-5 cups potatoes)
  • Spread potatoes in greased casserole pan. Top with sour cream and spread in even layer with spatula. Sprinkle with shredded cheese evenly.
  • Bake for 10 minutes or until cheese is thoroughly melted.

Also, this was my first time using Idahoan potatoes….and they are amazing! Game changer and definitely a new favorite in my shopping cart. Thanks Mom It Forward for providing these mashed potatoes. We loved them!
