Chocolate Coconut Prune Energy Balls (Paleo Approved)

These energy bites are loaded with so many nutritious ingredients, but taste so good that you would never guess that they’re also healthy for you! I’m always on the search for healthy snack options, especially those that can satisfy a sweet tooth too! These energy bites are SO good and you’ll never guess what the main ingredients is:

PRUNES!

I feel like prunes are one of those foods that kind of have an unfortunate bad rap of being a food for only the old or sick, which prevents a lot of people from giving them a try. Prunes have so many amazing health benefits, such as aiding digestion, being loaded with nutrients, antioxidants and vitamins and a great source of fiber.

On my last trip to Meijer, I stumbled upon Mariani Probiotic Pitted Prunes made with California grown prunes (you can find them near you here). Mariani Probiotic Prunes are a prebiotic and probiotic that supports overall wellness and digestive health so they’re basically super-charged prunes! These probiotic prunes have unique Ganedan BC3o probiotic which is designed by nature to survive and thrive in conditions that another probiotics cannot which allows this strain to be be ten times more effective than the probiotics that you find in yogurt. Since Mariani prunes are a prebiotic, they are the perfect complement to the probiotic.

While prunes are great to snack on their own or even on top of a salad, I absolutely love making them into energy bites or bars! These bites are SO easy to make and addictively good. Seriously, you may want to hide some of them away or pop them in the freezer so you don’t run the risk of eating the whole batch in a sitting. I’m at that point of summer where when my kids ask for another snack, I feel like I’m wracking my brain trying to think of something healthier for them to eat and these have been the perfect snack for them to enjoy!

These prune energy bites combine prunes, almonds, coconut, cocoa powder, coconut oil and vanilla extract. Simple and real ingredients that most of us already have in our pantry. They mix together to form little balls of deliciousness that remind me of Almond Joy candy bars, but thankfully they are a healthier snack option that totally satisfies a sweet tooth while also being super great for gut health!

Did I mention that they are diary free, vegan, have no refined sugars and are paleo approved?! Plus the probiotic prunes help enhance the absorption of nutrients while also helping reduce abdominal pain and bloating.

No Bake Chocolate Coco-Nutty Prune Energy Bites (Paleo)
These prune energy bites combine Mariani Probiotic Prunes, almonds, coconut, cocoa powder, coconut oil and vanilla extract to create little balls of deliciousness remind me of Almond Joy candy bars, but they are a healthier snack option that totally satisfies a sweet tooth while also being super great for gut health!

Instructions
  1. Add almonds into food processor and chop until bread crumb consistency.
  2. Add remaining ingredients and mix until a thick fudge-like consistency forms. If dough is crumbly, add one tablespoon at water at a time until its a thicker, more solid consistency.
  3. Transfer mix to a bowl and roll into one inch balls. Roll balls in coconut flakes (optional). You may put dough into the fridge prior to forming balls to harden a bit, if preferred.
  4. Store in refrigerator for up to 5 days.
