Breaded Alaska Cod Kabobs

These fish kabobs are great for a weeknight meal or serving a crowd. The kabobs add a fun touch, the crunchy panko breadcrumb crust gives a satisfying crunch and the tangy dipping sauce completes the meal!

Ingredients
  

Fish Kabobs

  • 1 pound alaska cod fillets cut into 1 to 2 inch chunks
  • 1/2 cup flour
  • 3/4 cup panko bread crumbs
  • 1/3 cup parmesan cheese
  • 1 Tbsp Italian seasoning
  • 1/2 to 1 Tbsp garlic powder
  • salt and pepper to taste
  • 2 eggs beaten
  • skewers if wooden, soak 30 minutes in water prior to use.

Lemon Dill Dipping Sauce

  • 1/4 cup greek yogurt
  • 2 Tbsp light salad dressing
  • 1 tsp dijon mustard
  • 2 tsp lemon juice
  • 1 Tbsp fresh dill minced
  • 1 Tbsp capers chopped. Optional, but adds great flavor.
  • lemon zest optional

Instructions
 

Fish Kabobs

  • Preheat oven to 375 degrees. Place wire rack on baking pan and oil very well.
  • Combine bread crumbs, parmesan cheese, Italian seasoning, garlic powder, salt and pepper and mix well in shallow bowl.
  • Place flour in separate bowl by itself. In another separate bowl, beat both eggs well.
  • Coat each piece of cod in flour, dip in egg and then dip in bread crumb mixture. Coat heavily with bread crumb mixture.
  • Place breaded cod onto skewers and place on wire rack.
  • Bake for 20 to 23 minutes until fish is thoroughly cooked and flaky.

Lemon Dill Dipping Sauce

  • Mix all ingredients together well and let flavors set for 20 minutes. Serve with fish as a tangy dipping sauce.
