Crunchy Coconut Cluster
Deliciously sweet and salty crunchy clusters of coconut, pumpkin seeds, heart healthy seed mix and honey.
Ingredients
- 1 1/2 cup coconut flakes
- 3/4 cup unsalted pumpkin seeds can substitute with sunflower seeds or do a mixture
- 1/4 cup hemp hearts, chia or flax seeds I use Triple Omega Seed Mix from NOW Foods
- 1/3 cup maple syrup
- sea salt to taste
Instructions
- Preheat oven to 350 and line a cookie sheet with parchment paper
- Mix all dry ingredients together in a medium bowl.
- Add maple syrup and mix well.
- Place tablespoon sized clusters on parchment paper. Sprinkle with generous amount of sea salt.
- Bake 13 to 15 minutes until coconut flakes turn a golden brown.
- Remove from oven and let cool. Clusters made spread a bit during cooking process. You can simply take a splatula and push them into shape. When they cool they will harden into clusters. Remove carefully from paper.
