Crunchy Coconut Clusters

A little backstory…

A few months ago we were on our bi-weekly big box grocery club trip and they had ALL the samples out for yummy food to try. I think the fact that they give out all those samples while shopping may be one of the main reasons we love it there (plus it keeps the kids happy and entertained so they don’t lose their minds while shopping). Anyway, they had these delicious sweet and crunchy coconut morsels to sample and I fell in love with them on the spot! While I didn’t purchase them that day (they were shockingly expensive), I snapped a picture of the ingredients list to keep in mind for later.

I finally had a chance to do a little recipe creation and managed to create a pretty awesome copycat recipe for these yummy crunchy coconut clusters!

These crunchy clusters combine the nuttiness of roasted coconut flakes with sunflower seeds, Triple Omega Seed mix (chia, flax & hemp seed hearts) and sweetness of maple syrup. They are amazingly delicious and totally satisfy a sweet tooth while still containing natural ingredients. The best part, they only take 15 minutes to make!

Crunchy Coconut Cluster

Deliciously sweet and salty crunchy clusters of coconut, pumpkin seeds, heart healthy seed mix and honey.
Prep Time 5 minutes
Cook Time 13 minutes
Total Time 18 minutes
Course Snack
Servings 15 clusters

Ingredients
  

  • 1 1/2 cup coconut flakes
  • 3/4 cup unsalted pumpkin seeds can substitute with sunflower seeds or do a mixture
  • 1/4 cup hemp hearts, chia or flax seeds I use Triple Omega Seed Mix from NOW Foods
  • 1/3 cup maple syrup
  • sea salt to taste

Instructions
 

  • Preheat oven to 350 and line a cookie sheet with parchment paper
  • Mix all dry ingredients together in a medium bowl.
  • Add maple syrup and mix well.
  • Place tablespoon sized clusters on parchment paper. Sprinkle with generous amount of sea salt.
  • Bake 13 to 15 minutes until coconut flakes turn a golden brown.
  • Remove from oven and let cool. Clusters made spread a bit during cooking process. You can simply take a splatula and push them into shape. When they cool they will harden into clusters. Remove carefully from paper.

As you all know, I love NOW products! They are always super high quality and honestly, they just taste great every time. Admittedly, I’m not normally a huge fan of maple syrup, but I can’t get enough of their brand. The flavor of NOW maple syrup is pure, perfectly sweet and great for baking with. I use their Triple Omega Seed Mix ALL the time (on yogurt, in homemade snacks, sprinkled on salads) and love all the heart boosting nutrients that it has. Such a great way to add a major punch of Omega fatty acids, as well as plant-based protein and fiber.         Hello! I haven’t tried it with shredded coconut so I can’t tell you for sure. If you do try it, I would watch the bake time carefully as the flakes will brown much quicker.

    I made these tonight. Yummy. I replaced the maple syrup with honey that had crystallized so I melted it in the microwave and ended up with about the right amount…(I’m known to be a lousy measuring cook, I cook by feel and taste). I doubled the recipe and used half sesame seeds and half chopped pecans. I used chia seeds. I spooned onto parchment then used damp fingers to press each mound together as tightly as I could. They only took about 7 minutes to start browning. I let them cool completely before touching them. The bottoms stayed a little sticky so I tipped them on their sides tonight to see if they will crisp a bit more overnight. Would totally make again. Any crumbles will be tasty GF granola 😉

      YAY! I’m so glad that you enjoyed them and love your customizations! I switch up how I make them every time depending on what ingredients I have to use. It’s a very forgiving recipe that can take a lot of additional mix-in’s. 🙂
