To save time for quick meals during the week, prep and cook the chicken ahead of time and you’ll have a filling and nutritious meal on the table in minutes. For the chicken thighs, I season them generously with salt, pepper, garlic and a bit of paprika and toss a few quartered sweet potatoes on the grill with them. I add them to a bowl with rice or quinoa and then drizzle with a citrus infused tahini dressing.
This citrus ginger tahini sauce is the perfect blend of sweet and nutty with a little kick from red pepper flakes. It love drizzling it on roasted veggies for a little pop of flavor. You can also thin it down a bit with water for a yummy dressing that pairs wonderful with kale salads.
