Mighty Sesame Organic Tahini

We LOVE tahini in our house and Mighty Sesame Organic Tahini (they have two varieties Mighty Sesame Organic Tahini: & Mighty Sesame Harissa Tahini) is one of my favorites for a few reasons! The convenient squeeze bottle makes using it super easy and ready to go at all times to add some delicious nutritional flavor to any dish. Tahini is a great source of protein and is power packed with 260mg of calcium in one serving. While we often use tahini for hummus, there are so many great uses like salad dressings, sauces (like used in the recipe I’m sharing today), dips or as a vegan alternative for mayo. I often batch cook proteins (like chicken breast or thighs, pulled pork, etc.) early in the week and these cups are great to pair with a protein and veggies for a quick and healthy meal that’s ready in minutes. With several different varieties (jasmine rice and brown rice & quinoa), these cups are lightly flavored and pair well with so many dishes and are so convenient in how quickly they are ready to serve. I simply heat up a cup, add my protein on top, add some veggies and drizzle with sauce for a perfectly portioned and flavorful meal that’s ready in minutes.

Now let’s whip up this yummy dish that you’ll love! To save time for quick meals during the week, prep and cook the chicken ahead of time and you’ll have a filling and nutritious meal on the table in minutes. For the chicken thighs, I season them generously with salt, pepper, garlic and a bit of paprika and toss a few quartered sweet potatoes on the grill with them. I add them to a bowl with rice or quinoa and then drizzle with a citrus infused tahini dressing.

This citrus ginger tahini sauce is the perfect blend of sweet and nutty with a little kick from red pepper flakes. It love drizzling it on roasted veggies for a little pop of flavor. You can also thin it down a bit with water for a yummy dressing that pairs wonderful with kale salads.

Ingredients
  

Citrus Ginger Tahini Dressing

  • 1/3 cup Mighty Sesame Tahini
  • 1/4 cup orange juice
  • 2 Tbsp Bragg Apple Cider Vinegar Citrus Ginger can also use plain apple cider vinegar
  • 1 Tbsp maple syrup
  • 1 Tbsp soy sauce
  • 1/4 tsp salt
  • 1/4 to 1/2 tsp garlic powder
  • 1/4 tsp ginger
  • pinch of red pepper flakes
  • pinch of smoked paprika

Instructions
 

  • Add all ingredients together and mix well. You can add water to thin as necessary.
