The sun is shining, temperatures are warming, days are getting longer and that means one thing: grilling season! Today I’m sharing one of my favorite grilling recipes: Grilled Mesquite Lime Pork Tenderloin! This main dish is so simple to make and produces the most juicy and flavor popping tenderloin every single time! It’s perfect served alone, but I absolutely love serving the tenderloin on top of cilantro lime rice topped with lots of veggies!

There’s just something about grilling that makes meals taste just that much more flavorful! The rich flavors, char-broiled goodness and caramelization that the grill can provide is what gives grilling that mouth-watering edge that you just can’t seem to obtain when oven roasting or baking. Once the temperatures start warming up here in the Midwest, we immediately bring out the grill and get busy cooking!

One of my favorite meats for grilling is pork tenderloin. Pork tenderloin is one the most tender, lean cuts of pork available, is super easy to prepare and great for family meals and entertaining. It’s easily one of the most overlooked meats that people often don’t consider for grilling. The short grill time (under 30 minutes) makes it a perfect quick meal option and when cooked properly, it turns out incredibly moist and juicy!

For this grilled mesquite lime pork tenderloin recipe, I used McCormick Grill Mates Mesquite Marinade! It makes it so simple: simply add oil, water and seasoning mix together and let your meat marinade for at least 15 minutes (I prefer longer – about 2 hours for the most bold flavor). In these rice bowls, I love adding juice of half a lime to the marinade for a little citrus boost that goes so well with the cilantro lime rice that it’s served on. When grilling, I always add some extra veggies to the grill, like mini peppers, to add to my dishes too!

These mesquite lime pork tenderloin bowls are perfect for a vegetable packed meal. It can be altered to use whatever veggies, grain and beans you have on hand. Don’t have black beans, no biggie, use white beans. You can use fresh, canned or frozen corn…mix and match with whatever you have stocked! While I love this meal on rice, you can easily use quinoa instead. The mesquite flavor from the pork pairs well with so many things that it really serves as a great flavor-packed base for this meal. The possibilities are endless and you can mix-match for countless options — the star of the meal is definitely the pork tenderloin!

Grilled Mesquite Lime Pork Tenderloin Rice Bowl

This main dish is so simple to make and produces the most juicy and flavor popping tenderloin every single time! It's perfect served alone, but I absolutely love serving the tenderloin on top of cilantro lime rice topped with lots of delicious veggies!

Total Time 1 hour 30 minutes
Servings 6 people

Ingredients
  

  • 2 lbs pork tenderloin
  • 1 packet McCormick Grill Mates Mesquite Marinade
  • 1/4 cup water
  • 1/4 cup oil
  • 1 lime halved
  • 3 cups rice
  • 1-2 cans black beans rinsed
  • 1 1/2 cup corn
  • cilantro optional
  • additional veggies: peppers, onion, tomatoes

Instructions
 

Grilled Mesquite Lime Pork Tenderloin

  • Combine McCormick Grill Mates Mesquite Marinade with water, oil and juice of 1/2 a lime. Whisk well.
  • Place pork tenderloin and marinade mixture in plastic bag. Let marinade for at least 15 minutes (I marinade for 1 hour for intense flavor).
  • Preheat grill to medium high heat. Oil grates well.
  • Place tenderloin on direct heat and grill for 16-22 minutes. Flip tenderloin once half way through (grill each side 8 to 11 minutes) cooking. Grill until internal temperature is 145ºF. Remove from grill and let sit for 5 to 10 minutes to let juices redistribute.
  • Slice tenderloin against the grain.
  • Serve on top of rice. Top with remaining ingredients: corn, black beans, veggies.

Cilantro Lime Rice

  • Prepare rice as directed on package.
  • Squeeze juice of half a lime over rice, add chopped cilantro and mix well. Season with salt and pepper as desired.

When grilling pork tenderloin, there’s a few important things to keep in mind:

  • Start with a hot grill! I always turn my grill on early and let it get nice and hot before cooking! This allows you to get a great sear to lock in those flavors.
  • Oil grill grates well to avoid sticking.
  • When flipping pork, use tongs instead of piercing with a fork to avoid letting out all those flavorful juices for tender, moist meat.
  • Grill until internal temperature reaches 145 ºF.
  • Remove from grill and let sit for 10 minutes to redistribute and seal in all those flavorful juices!
