Healthy Snacking: Coconut Granola with Greek Yogurt

I can’t believe that it’s already 2020! I remember being younger and thinking that we’d be living full out Jetson-style with flying cars and robot housemaids by now. Since I don’t have a robot buzzing around the kitchen for me quite yet, I’m still spending lots of time having fun creating delicious and healthy recipes for my family. I’m not complaining — it’s one of my favorite things to do!

Which leads me to sharing one of my favorite healthy snacks: FAGE TruBlend Greek yogurt and a simple recipe for healthy coconut granola! This duo is the perfect pair for satisfying a sweet tooth!

While I’m not really a “new year, new me” kind of person, I do like taking the beginning of the year to focus on areas of my life that can use improvement. I think that one area in which many of us are always working to strive for is healthier eating. I keep healthy eating pretty simple with a few simple guidelines:

  • More fruits & veggies (aim for half my plate)
  • Majority of diet is wholesome and natural foods (avoid sweeteners, preservatives, artificial colors and flavors)
  • High quality proteins
  • Finding healthy snack options
  • Eating more foods to improve & maintain gut health

When it comes to snacking, I have a wicked sweet tooth. Keeping healthy, easy and on-the-go sweet snack options prepped is a must for me (and for my snack-a-holic kids). One of my go to healthy snack options is FAGE TruBlend Greek yogurt!

I’ve been obsessing with FAGE TruBlend Greek yogurt lately. Having a high protein diet is so important to me, especially as I’m very physically active and protein is a must to help muscles heal and grow. The individual serving cups have 13 grams of protein – 25% of your recommended daily intake – in one yummy serving. TruBlend is made with delicious and creamy low-fat Greek yogurt and combined with real fruits (like strawberry, blueberry, cherry and peach) for a naturally sweetened wholesome treat without added sugar or sweeteners.

Whether it’s post-workout or something to help power me through the midday slump, FAGE TruBlend helps me maintain my healthy eating goals while keeping up with my busy life! I love that they have the yogurt cups (5.3 oz) to quickly grab and go and large tubs (32 oz.) for keeping in the fridge for a post-dinner snack for my kiddos! While I enjoy them on their own, adding a spoonful of crunchy granola on top is so good too.

Most granolas that you find in the store are loaded with tons of added sugars so I love making my own. This healthy, low sugar coconut granola has so many good flavors: shredded coconut and coconut flakes make it a tropical inspired granola, while the roasted almonds gives a deep flavor and it’s naturally sweetened with maple syrup! It’s totally modifiable depending on your dietary needs too:

  • Don’t like almonds? Substitute with whatever nut you do like.
  • Nut free? Use more seeds (pumpkin, chia, flax, etc.)

Healthy Coconut Granola

This delicious and low sugar granola is loaded with so much nutty and coconut goodness! So simple to make and a fraction of the sugar (and cost) when compared to most store-bought brands. Lovely to sprinkle on top of Greek yogurt!
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 10 1/2 cup servings

Ingredients
  

  • 3 cups oats
  • 3/4 cup slivered or chopped almonds
  • 1/2 cup pumpkin seeds can substitute with sunflower seeds
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup coconut flakes if don't have/can't find, substitute with shredded coconut
  • 1/3 cup maple syrup
  • 1/2 cup coconut oil
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • salt pinch or to taste

Instructions
 

  • Preheat oven to 350° and cover large cookie sheet with parchment paper.
  • In large bowl, add oats, almonds, pumpkin seeds, cinnamon, ginger and salt. Mix well.
  • In small bowl, add coconut oil (heat in microwave to liquify), maple syrup, and vanilla. Mix well and add to oat mixture.
  • Continue mixing until all oats are lightly covered in liquid. Add mixture to cookie sheet and spread evenly.
  • Bake for 10-15 minutes. Remove from oven and mix in shredded coconut and coconut flakes.
  • Cook for 5 to 10 more minutes, until coconut begins to brown. Remove from oven and let cool.

    I love the crunch with my yogurt. The store brand has so much sugar in it so I will be giving this a try.
