Healthy Greek Egg Salad

We had our first week of scorching summer weather and it has had me craving all the cold and refreshing foods. Nothing says summer like a fresh salad bursting at the seams with seasonal ingredients with a mediterranean twist!

This recipe for healthy greek egg salad is perfect for summer gatherings, BBQ’s and is a great option for a quick and healthy lunch or dinner in a pinch, especially on those scorching hot days where a cool meal is the only thing that sounds palatable. Hard boiled eggs, garbanzo beans, ripe juicy tomatoes, crisp cucumbers, feta cheese and olives are tossed in a tangy homemade vinaigrette Greek dressing for a perfect quick, simple, healthy and hearty salad. It can be mixed together in under 10 minutes and is a fabulous meal to enjoy on the patio or deck on a hot day.

I’m a huge fan of this greek egg salad because I almost always have all the ingredients on hand, especially in the summertime when we are harvesting veggies from our garden like crazy. While being chockfull of healthy and fresh veggies, the addition of hard-boiled eggs and garbanzo beans makes this a perfect stand-alone meal. The eggs lend a punch of protein to this dish, while garbanzo beans provide fiber to help keep you feeling full and satisfied longer. When short on time, this is my absolute go-to meal because it contains everything I need, is convenient (especially with the help of Great Day Farms Eggs) and can be made so fast!

To save even more time, I love to keep Great Day Farms hard-boiled eggs in my fridge. You can find them at your local Walmart deli and having them pre-peeled makes them great for grabbing and going. Aside from adding them to this meal, I love slicing a few eggs to throw on a chef salad or toast or just nomming on one post-workout for some extra protein. Eggs are one of those foods that I can eat everyday because they are so versatile. I love the convenience of hard-boiled eggs, especially when you are short on time. Great Day Farms hard-boiled eggs are a staple for our fridge.

I prefer to make mine with a homemade light greek vinaigrette dressing, but you can definitely just add a bit of store bought greek dressing to your veggies, beans and eggs. The vinaigrette in this recipe uses greek yogurt which gives it a creamy, tangy flavor while also being lower calorie and diet friendly.

Healthy Greek Egg Salad

Ingredients
  

  • 1/4 cup plain Greek yogurt
  • 1 Tbsp red wine vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/4 tsp thyme
  • 1/4 tsp basil
  • 4 hard-boiled eggs chopped
  • 1 small tomato chopped
  • 1/2 cup cucumber chopped
  • 1/4 cup kalamata oilives chopped
  • 1/2 cup garbanzo beans drained well
  • 1/3 cup feta

Instructions
 

  • Mix together greek yogurt, red wine vinegar and seasonings.
  • Add in remaining ingredients and mix gently.
  • Serving on top of spinach of spring mix, in a pita or whole wheat tortilla wrap.

Notes

Note: any combination of Italian or Greek seasonings work well in this recipe. It's very forgiving and customizable.
