Since we’ve been home so much more this past year, we’ve been having brunch at home more often! It’s a fun family tradition that we’ve established over time. We love to gather around the table on Sunday mornings, savor our coffee, enjoy all of our favorite breakfast foods and finish with a light dessert or treat. It gives us something to look forward to each week and allows me to get a little creative in the kitchen too!

This fresh and light lemon yogurt tart has been a work in progress with a few attempts and variations, but I’ve finally got the flavors just right with the perfect amount of sweet & tartness. It’s quickly become a well-loved treat by everyone in the family and is a perfect springtime and summer treat!

Aside from the obvious brunch, this would be a delectable treat for Easter, Mother’s Day, baby and wedding showers and for backyard BBQ’s. It’s such a quick, healthier-for-you treat that you can make in under 30 minutes that it’s really one of those desserts that you’ll find yourself coming back to time and time again. It’s so easy to make that no one will blame you for whipping it up to enjoy all week long too!

This lemon tart is basically the dessert of my dreams: a delicious nutty crust, a lemon filling reminiscent of cheesecake (but wayyyy lighter) and topped with lots of fresh berries. We’re not big “cake” people in our home so I love creating lighter fruit inspired treats. Every now and then I get a craving for sweets and these tarts are the perfect combination of sweet and crunchy with this toasted crust and with a creamy and tangy lemon filling. When creating desserts I try to stick to more natural ingredients and sweeteners and this recipe does all that without sacrificing flavor!

This tart has an almond crust that is naturally gluten-free and the toasted nut flavor complements the lemon perfectly. While I love the crust, the creamy filling of this lemon tart truly does steal the show! I love lemon inspired dishes so I couldn’t wait to add a lemon tart to my recipe book! The filling is made with just a handful of ingredients: FAGE Total Plain Greek Yogurt, light cream cheese, lemon zest & juice and naturally sweetened with maple syrup.

Using FAGE Total 2% Plain Greek Yogurt in this tart recipe is a great way to lighten up the typical tart recipe.

For the lemon tart filling, creamy FAGE Total 2% Plain Greek Yogurt combines with a small amount of light cream cheese for a lightened up cheesecake flavor. The addition of fresh lemon juice and lemon zest is perfectly tangy and sweet when mixed all together. Once mixed well, you simply add to your cooled tart crust and adorn with fruit of your choice. Raspberries, blackberries and blueberries all go together extremely well with the lemon flavor. I love adding a few mint leaves to add a dynamic flavor profile too!

Ingredients
  

Almond Tart Crust

  • 2 cup almond flour
  • 1/3 cup coconut oil melted
  • 3 Tbsp maple syrup
  • 1 tsp cinnamon

Creamy Lemon Tart Filling

  • 1 3/4 cup FAGE 2% Total Greek Yogurt I use 2%, but any fat content will work
  • 4 oz. reduced fat cream cheese
  • 1 tsp vanilla extract
  • 2 Tbsp maple syrup
  • 1 tsp lemon zest
  • 2 Tbsp lemon juice fresh

Instructions
 

Almond Crust

  • Preheat the oven to 350ºF. Grease a 10-11" tart with cooking spray or oil.
  • In medium bowl, add all tart crust ingredients together and mix well.
  • Press mixture in an even layer firmly into the tart pan. Make sure to press into the edges as well. Poke holes into the crust to prevent bubbles from forming.
  • Bake for 12-15 minute until crust is golden brown. Let cool.

Yogurt Lemon Filling

  • In large bowl, add all lemon tart filling ingredients together. Use a hand mixer to mix and blend until smooth consistency.
  • Pour filling into cooled tart crust and spread evenly in pan.
  • Top with fruit and berries as desired. Chill.

Notes

This tart is best served when filling is added several hours prior to serving for the most crisp tart crust. 
Notes: Crust can be made a day ahead and stored in the refrigerator in a covered container.
