Lately our kids have been SO picky when it comes to eating! Despite that, one food that always seems to be a hit with our 2 and 4 year old is fish. We’ve been creating lots of great recipes and variations for serving fish in our home lately and I can’t wait to share this recipe for Crunchy Breaded Alaska Cod Kabobs with a tangy lemon dill dipping sauce. The kids love the fun presentation of this meal, the crunchy panko parmesan crumb crust adds a nice texture and anything that can be dipped is always a winner. This kid-friendly dish is sure to be a hit with everyone in the family and it’s simple, easy preparation makes it a great weekday option.
When serving fish to my family, wild-caught, Alaska whitefish varieties (such as halibut, sablefish, sole, Alaska pollock and cod) most often have the best results. The mild taste isn’t over powering and it’s so versatile when it comes to cooking which makes them a delicious and easy way to add more seafood to my families diet. I love using Alaska seafood due to it’s high quality. The pristine fisheries of Alaska provide nearly 60% all seafood harvested in the United States while also maintaining sustainable harvesting practices.
This is my favorite way to prepare cod. This recipe for lightly breaded cod kabobs is so easy and satisfying. Panko bread crumbs and parmesan cheese give this fish a great crunch and the kabobs are a fun touch. We love serving it with a lemon dill dipping sauce. If kabobs aren’t your thing, simply omit and bread the fillets.
Breaded Alaska Cod Kabobs
Ingredients
Fish Kabobs
- 1 pound alaska cod fillets cut into 1 to 2 inch chunks
- 1/2 cup flour
- 3/4 cup panko bread crumbs
- 1/3 cup parmesan cheese
- 1 Tbsp Italian seasoning
- 1/2 to 1 Tbsp garlic powder
- salt and pepper to taste
- 2 eggs beaten
- skewers if wooden, soak 30 minutes in water prior to use.
Lemon Dill Dipping Sauce
- 1/4 cup greek yogurt
- 2 Tbsp light salad dressing
- 1 tsp dijon mustard
- 2 tsp lemon juice
- 1 Tbsp fresh dill minced
- 1 Tbsp capers chopped. Optional, but adds great flavor.

Instructions
Fish Kabobs
- Preheat oven to 375 degrees. Place wire rack on baking pan and oil very well.
- Combine bread crumbs, parmesan cheese, Italian seasoning, garlic powder, salt and pepper and mix well in shallow bowl.
- Place flour in separate bowl by itself. In another separate bowl, beat both eggs well.
- Coat each piece of cod in flour, dip in egg and then dip in bread crumb mixture. Coat heavily with bread crumb mixture.
- Place breaded cod onto skewers and place on wire rack.
- Bake for 20 to 23 minutes until fish is thoroughly cooked and flaky.
Lemon Dill Dipping Sauce
- Mix all ingredients together well and let flavors set for 20 minutes. Serve with fish as a tangy dipping sauce.
