No Bake Lemon Coconut Energy Bites

I’ve been meaning to share this recipe with you all for months, but it kept getting pushed to the bottom of my to do list. I’ve finally found a sliver of time to share one of my favorite energy ball/bite recipes with you: no bake lemon coconut energy bites!!

These no bake lemon coconut energy bites are addictively good! Full of citrusy flavors, hints of coconut and yummy nuts to keep you full and energized. They’re vegan and dairy free too! They are made with all natural ingredients and best of all — take only 10 minutes to make! The hardest part is cleaning your food processor afterwards (oh, and not eating too many of them at a time!). Many of the ingredients are found in your pantry and can be substituted as desired.

Substitutions:

  • Almonds for Cashews
  • Agave or Honey or Maple Syrup (will definitely have a different flavor)
  • Unsweetened or sweetened coconut flakes (just cut back on the sweetener a bit)
  • Coconut flour or almond flour (use a bit less)

With the weather being a little more dreary, these delightful balls of flavor are the perfect little way to add a little spring to your step.  They’re perfect for a late night snack, boost post-workout, on-the-go or for packing into your kiddos lunch boxes. They’re a feel-good snack option!

This recipe makes about 18 1-inch bites and I’d estimate that a serving is around 2-3 bites. Sometimes I like to make different sizes so that I can pick or choose depending on how hungry I am! If needed, they can be frozen as well (and to be honest, they’re pretty tasty as a frozen treat too!).

Alright, let’s get to the good stuff: the recipe!

Lemon Coconut Energy Bites

Prep Time 10 minutes
Total Time 10 minutes
Course Dessert, Snack
Servings 15 balls

Ingredients
  

  • 1 cup almonds
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup lemon juice fresh preferred
  • 2 Tbsp agave
  • 1 Tbsp coconut oil
  • 1 tsp vanilla extract
  • lemon zest

Instructions
 

  • Add almonds to food processor and process until fine crumbles form.
  • Add remaining ingredients and process until well mixed.
  • Roll the dough into one inch balls.
  • Roll in more coconut flakes, if preferred.

Notes

Can be stored in refrigerator for up to 7 days.

    WAIT you’re speaking my language!!!! I love lemony desserts but since I’m GF and try to be as healthy as I can, I have to skip all the lemon bars. I’m totally making these this weekend and I’m so excited!
