Noodles & Co. Newest Veggie Infused Noodle: Caulifloodle

There are a few foods that I absolutely love and pasta is definitely one of them! I’ve had lots of different types of pasta: traditional, wheat, veggies noodles, quinoa, chickpea, beet infused, you name it, I’ve likely tried it. With so many different types of noodles out there, there can be a lot to choose from and not all of them measure up to the taste and texture of regular pasta…until now!

Noodles & Co. just added a new cauliflower infused rigatoni, also known as caulifloodles, to the menu and I was so pleasantly shocked at how good they are! Cauliflower has been pretty popular for a hot minute and has been added to so many foods, but I feel like I could still taste the cauliflower in most foods. However, the new Caulifloodles (cauliflower infused noodles) at Noodles & Co. taste amazing and just like regular classic pasta – no weird cauliflower taste!

The texture of the caulifloodles at Noodles & Co. is great, the taste is the same as regular noodles and it makes an amazing substitute for a healthier-for-you pasta option! To make it even better, there’s a full serving of veggies in every regular sized entree and a half serving in a small or a kid’s meal. Lately my kids have been super picky when it comes to veggies and these noodles are great for easily adding an additional half serving of vegetables into their diet. Since they taste like classic noodles they don’t even know that they’re eating veggies which can be helpful and appreciated when you have picky kiddos. You can substitute caulifloodles in any dish for no extra cost which I absolutely love and something that I’ll definitely be doing from now on!

Since my husband and I loved the cauliflower rigatoni, I wanted to give it the ultimate taste test and see if my kiddos could notice the difference (and let’s be honest, I just wanted a night off of cooking too). We grabbed a fewNoodle & Co. kid meals (and subbed in the cauliflower rigatoni) for the kiddos to go and guess what? They had no idea that they were eating cauliflower noodles in place of regular noodles.

Even my most veggie averse five year old was a fan!

It’s a major mom win when you find a meal that your picky kiddos love, will eat without complaint and can easily add in some extra veggies without a fight (1/2 serving per kid’s meal)!

Don’t miss out on the two newest additions to the menu that feature the Caulifloodles: Cauliflower Rigatoni in Light Onion Cream Sauce and Cauliflower Rigatoni Fresca with Shrimp. The savory light onion cream sauce has a delicious flavor and is packed with lots of great veggies like roasted zucchini, mushrooms and spinach and finished with MontAmore cheese and parsley (we added chicken for an additional protein boost).

I love a light olive oil based sauce so I was super excited to try the Cauliflower-infused rigatoni with shrimp. Balsamic vinaigrette, olive oil, roasted garlic, onion, tomato, spinach and parmesan top combine with shrimp and caulifloodles for a pasta dish that’s delicious and light. We’ll definitely be hitting up Noodles & Co. again soon to add a little caulifloodle goodness into our weekly routine.

    Caulifloodles sound so good! I haven’t been to a Noodles & Co in years, I never think of them as a place for a healthy dinner. I may have to stop in and try the caulifloodles soon though.

    Yes! This makes me so happy. I love Noodles and Co., but I just really needed a healthier option.
