One-Pot Creamy Lemon Garlic Ham Pasta

When I thought about my kids both going to school this fall I thought that I’d have all the time in the world to prepare these elaborate and time consuming dinners. Little did I realize, how crazy busy the afternoons and early evenings would be. Most days, I’m rushing home after preschool and bus pick-up, getting everyone settled and then standing in the middle of my kitchen wondering what on earth I can make for dinner in less than 30 minutes. I’m sure many of you feel the same so I wanted to share a mealtime hack that I’ve been loving and one of our favorite recipes for a quick, delicious weeknight dinner!

I’ve been switching up my grocery list and definitely stocking up on some kitchen “helpers” that save me time and energy in the kitchen. One of my recent grocery additions are Smithfield® Anytime Favorites! The precooked and pre-cut ham products simplify mealtime by cutting out a lot of the work to allow my to get a delicious, flavorful meal on the table no matter how derailed or crazy my day is.

One of my favorite meals for using their cubed ham is one-pot creamy lemon garlic ham pasta. This dish is so simple to make and one that my kids gobble up! I’ve made this one in the past when I had leftover ham, but with the use of Smithfield Anytime Favorites, it makes this meal even easier and quicker to make.

This pasta is loaded with delicious flavor and made with simple ingredients that you already likely have in your pantry and fridge. What I particularly love about this pasta is that unlike most ham pastas, this one is a bit lighter as the sauce is made of a mixture of cream and broth. The addition of lemon juice gives it a fresh flavor that really melds together so well with the savory ham. It’s comforting, easy, one-pot (yay for less dishes to clean-up) and can be on the table in less than 30 minutes.

It’s totally modifiable too. While I love the peppers, they can be omitted and the broccoli can easily be substituted with peas for picky eaters.

Instructions
  1. Boil water and cook pasta according to directions on box.
  2. Add oil to large pan over medium heat. Sauté onion, red pepper, broccoli and ham until onions are translucent (about 3-4 minutes). Remove from pan.
  3. Add minced garlic to pan and sauté until fragrant. Add cream, chicken broth, lemon juice and Italian seasoning. Bring to boil, reduce heat and simmer until reduced & thickened.
  4. Add ham, veggies and pasta to pan and mix well. Sprinkle with parmesan and garnish with parsley.

    Mmmm! What a great dish! I think it’d be perfect for my lunch! I love Smithfield but haven’t seen this ham, but will be on the lookout!
