These peanut butter and chocolate chip protein bars are so delicious and go fast in our house! They are a delicious and healthier-for-you snack that can be made in 10 minutes and packed with lots of nutritional goodness! 

We are an active bunch in this house! Between the kids constantly being on the move, my husband participating in Crossfit and I have my consistent yoga practice, someone is always moving. With that said, I’m always searching for healthy snacks that can keep these bottomless pit tummies full and happy. These peanut butter protein bars are definitely a favorite in our house and I love how simple that they are to make. These protein bars can be made in less than 10 minutes, only use a handful of ingredients and require no baking!

These bars are seriously so addictively good and the best past is that they are a relatively healthy option too! These peanut butter protein bars have lots of delicious nutty goodness, packs a protein punch and is full of lots of really great healthy fats too. I love them for a midday boost or as a pre-workout snack.

Creamy peanut butter combines with chocolate chips and topped with one of my newest health-boosting finds: cranberry seeds! Yep, cranberries have seeds and these little red seeds have some seriously powerful nutrition in them:

  • Cranberry seeds help support digestive health
    • They have 1.6x more dietary fiber vs. chia and flax.
  • Cranberry seeds help support immunity
    • Cranberry seeds are a great source of zinc.
  • They may help support heart health
    • These tiny red seeds have a combination of dietary fiber + omega 3 fatty acids that may support heart health.

    • Cranberry seeds contain magnesium and zinc which may maintain brain health.

I recently had a chance to try Ocean Spray Cranberry Seeds and I’m really impressed! Ocean Spray Cranberry Seeds are upcycled from food waste & contribute positively to a more sustainable supply chain. I love the bright, vibrant red and the taste is very neutral which makes them easy to integrate into meals. You can add them to a large range of dishes, from smoothies, to snacks (like granola bars or energy balls), oatmeal, salads and baked goods. The possibilities are endless! My protein bars are a great starting recipe to give cranberry seeds a try! This recipe can be modified as needed for different dietary needs to easily be made dairy-free or vegetarian friendly. If vegetarian, use a plant based protein powder and use dairy-free chocolate chips for a dairy-free snack. While I prefer using an unflavored protein powder, you can use flavored powders as well. Both vanilla and chocolate will work, but obviously you’ll have a different flavor profile.

Peanut Butter & Chocolate Chip Protein Bars

Servings 8 bars

Ingredients
  

  • 1 cup peanut butter
  • 3/4 to 1 cup unflavored protein powder
  • 1/4 cup maple syrup
  • 3 Tbsp chocolate chips
  • 1/2 Tbsp Ocean Spray cranberry seeds

Instructions
 

  • Line a small baking dish with parchment paper.
  • In medium bowl, add peanut butter, protein powder and maple syrup together. Mix well until a dough like consistently forms. You can mix by hand or use a hand mixer.
  • Add half of the chocolate chips and mix in.
  • Take your dough mixture and press into the baking dish that is lined with parchment paper. Press the mixture evenly into the pan until it is flat. Make sure to press well on the edges.
  • Sprinkle the remaining chocolate chips and all of the cranberry seeds evenly on the bars. Press firmly into the dough.
  • Gently remove bars from the baking dish using the parchment paper. Cut evenly into bars.

Notes

Note: The amount of protein powder may vary depending on brand. If dough is too wet, add more protein powder. If it's too dry, you can add a small amount of water until a dough-like consistency.
Store refrigerated and use within 5-7 days.
