Anyone else feel like they are constantly adjusting their routines? I feel like we’ll finally get into a good routine and then everything changes again, especially this year. With so many things constantly changing and now with the addition of school starting up, our mornings can be pretty chaotic getting everything and everyone all set and ready for school or work.

One of my favorite ways to make mornings a bit easier is preparing easy and ready-to-enjoy breakfasts for the morning. Having a quick and healthy breakfasts that require little to no prep takes another item off my to-do list. One of our fridge must-have items that we restock weekly is Greek yogurt. Greek yogurt is such a staple in our home – from snacking to yogurt bowls to healthier desserts – it’s a super versatile and protein-rich addition in the kitchen.

Overnight oats are so easy to make and a great quick breakfast that is the perfect combination of protein, fiber and healthy fats. Using greek yogurt to make overnight oats makes for the creamiest and best textured overnight oats (much preferred over using just water or milk).  They can be easily modified to each taste and there are so many fun options that you can make. Preparing overnight oats in mason jars make them a great grab-and-go option too.

I wanted to share one of my favorite fall inspired overnight chia oat recipes today: Pumpkin Pie Overnight Chia Oats!! They taste like a pumpkin pie, but a much healthier option and the perfect combination to keep you full all morning long!

Thick vanilla Greek yogurt and pumpkin puree add a wallop of delicious flavor to this dish and radiates with fall flavors! Simply add all ingredients together in a jar or large glass, let sit overnight (or 5 hours) in the refrigerator, mix and enjoy! So easy, yummy and a great option for those chaotic mornings. You even prepare a few days worth at a time to have them ready to go all week as they last 3 to 5 days in the fridge. Another bonus: my kids love them too!

These overnight oats are a powerhouse breakfast when it comes to being packed with nutritional goodness:

  • Greek Yogurt: packed with protein, low sugar and makes a super creamy overnight oat.
  • Oats: Loaded with complex carb whole grains to keep you full longer.
  • Pumpkin puree: Loaded with tons of fiber!
  • Chia seeds: Great source of energy due to its combination of fiber, protein and healthy fats.

Not a pumpkin fan? Substitute with frozen blueberries for a delish option!

Pumpkin Pie Overnight Chai Oats

These pumpkin pie overnight chia oats taste like fall in a cup! Creamy Greek yogurt, old fashioned oats, pumpkin puree and chia seeds combine for a delicious and healthy breakfast or snack.

Ingredients
  

  • 1 container Vanilla Greek Yogurt (5.3 ounce)
  • 1/2 cup old fashioned oats
  • 1/2 cup milk
  • 1/4 cup pumpkin puree
  • 1 Tbsp chia seeds
  • 1/4 tsp pumpkin pie spice or a mix of cinnamon and nutmeg

Instructions
 

  • In a 16 ounce mason jar or glass, layer with half of the oats, chia seeds, milk, pumpkin puree and yogurt. Repeat.
  • Cover and refrigerate for at least 5 hours.
  • Mix together and enjoy! Add additional toppings as desired.

Notes

Overnight night oats will last for 3 to 5 days in the fridge.
