Pumpkin Spice Oatmeal Energy Balls
These pumpkin oatmeal balls are so darn delicious, made with all natural ingredients and take less than 10 minutes to make a big batch!
Ingredients
- 1 1/2 cups rolled oats
- 1/3 cup chocolate chips mini's work best
- 1/2 cup canned pumpkin puree
- 3/4 cup nut or seed butter peanut butter is my favorite
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp pumpkin spice
Instructions
- Add all ingredients into a large bowl and mix well. Stir until you have a thick dough.
- Place energy ball mixture in freezer for 10-15 minutes to firm up.
- Once firm, remove mixture from the freezer. Using a spoon or ice cream scoop, scoop the mixture and use your hands to form it into a ball shape. You can make them any size you want, but 1 inch is standard.
Notes
Optional: Adding 1/3 cup of chopped nuts (walnuts and/or pecans) is a wonderful additional to the mixture as well.
Storage: Pumpkin spice energy balls should be stored in the fridge and are best used within 7 days. You can freeze them to enjoy later (use within 3 months of freezing).
