Energy balls are one of my favorite healthier-for-you sweet treats to make in our house for so many reasons! With so many variations out there, there is truly a variety for everyone. I love switching this snack staple throughout the year to focus on seasonal flavors (these lemon coconut balls are so GOOD).

They’re easy to be modified for every diet and you can easily substitute ingredients which really come in handy when you’re trying to clean out the pantry, have allergies or if you accidentally find that you’re low on an ingredient.

These pumpkin spice oatmeal balls are definitely going to be a fan for all the pumpkin lovers out there! They are made with just a handful of ingredients and a fabulous way to use leftover pumpkin puree from baking. These energy balls have the perfect balance of pumpkin and fall spices combined with oats and peanut butter (you can substitute other nut or seed butters as needed) for delicious bite size fall treats! I love grabbing one or two when I need a midday energy boost and my kids absolutely love these for after-school snacks or included in their school lunch for a perfect take-and-go treat.

Pumpkin Spice Oatmeal Energy Balls

These pumpkin oatmeal balls are so darn delicious, made with all natural ingredients and take less than 10 minutes to make a big batch!

Servings 20 1 inch balls

Ingredients
  

  • 1 1/2 cups rolled oats
  • 1/3 cup chocolate chips mini's work best
  • 1/2 cup canned pumpkin puree
  • 3/4 cup nut or seed butter peanut butter is my favorite
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice

Instructions
 

  • Add all ingredients into a large bowl and mix well. Stir until you have a thick dough.
  • Place energy ball mixture in freezer for 10-15 minutes to firm up.
  • Once firm, remove mixture from the freezer. Using a spoon or ice cream scoop, scoop the mixture and use your hands to form it into a ball shape. You can make them any size you want, but 1 inch is standard.

Notes

Optional: Adding 1/3 cup of chopped nuts (walnuts and/or pecans) is a wonderful additional to the mixture as well.
Storage: Pumpkin spice energy balls should be stored in the fridge and are best used within 7 days. You can freeze them to enjoy later (use within 3 months of freezing).
