Rustic Sausage, Potato and Kale Soup

Once the leaves start dropping, days shorten and temperatures plummet, there’s nothing I love more than a hearty soup to warm me up from the inside. Those first few weeks of the season change are always the toughest for me and I feel like I can never get warmed up quite enough so I’m always turning to piping hot soups and teas to get nice and toasty.

This rustic italian sausage, potato and kale soup is a hearty soup that is loaded with tons of veggies, delicious flavors and it’s so incredibly easy to make. When I make this soup, I usually opt for a hot italian sausage to add a bit of kick and add a bit of additional warmth to the meal, but if spicy isn’t your thing, simply swap it out for regular italian sausage. The northern beans and potatoes add a great filling heartiness and the kale combines to complement the flavors. This soup is perfection: comforting, warms you from the inside, hearty enough that you don’t feel hungry an hour later and packed with delicious and dynamic flavors. Pair it with a crusty bread to sop up all that slurp-worthy broth and you’ve got a full meal!

The shining star of this soup is definitely the delicious and flavor packed broth. When it comes to soups, there is nothing worse than a bland and boring broth. The secret to a really good soup is a really good broth.  For years, I’ve reached for Better Than Bouillon when it comes to cooking or for making basic stocks for soups and stews.

I first discovered Better Than Bouillon products when I tired of throwing out unused boxed or canned broths (they have such a short usage date) and I disliked the gritty texture that I would find using bouillon cubes. Better Than Bouillon is a paste concentrate that is equivalent to a bouillon cube or broth. It easily dissolves and mixes into meals and has a superb flavor. While I’ve been using their Premium Chicken and Beef varieties for years, they have an enormous amount of varieties to choose from:

  • Premium Flavors: Chicken, Beef, Vegetable, Roasted Garlic, Chili, Clam, Fish, Ham, Lobster, Mushroom and Turkey
  • Organic: Roasted Chicken, Mushroom, Turkey, Beef and Vegetable
  • Vegetarian: Vegetable, Roasted Garlic, Organic Vegetable, Vegetarian No Beef Base, Vegetarian No Chicken Base
  • Reduced Sodium: Reduced Sodium Beef, Reduced Sodium Chicken, Reduced Sodium Vegetable

There’s a flavor and variety for every type of dish! Aside from soups, I love using Better Than Bouillon products for gravy, pasta sauces, simmering meats and adding flavor to veggies!

This recipe can be modified as needed for different dieting needs:

  • Vegetarian: Swap out the meat and add an extra can or two of beans and use Better Than Bouillon Vegetarian.
  • Low Sodium: Swap out Premium Chicken for Reduced Sodium Chicken.

Rustic Sausage, Kale and Potato Soup

Ingredients
  

  • 1 pound Spicy Italian Sausage optional: can use regular Italian Sausage
  • 1 onion diced
  • 2 garlic cloves minced
  • 6 cups water
  • 2 Tbsp Premium Chicken Better Than Bouillon
  • 2 sweet potatoes halved and sliced 1/4" thick
  • 1 russet potato sliced 1/4" thick
  • 1 can northern beans rinsed and drained
  • 4 cups kale raw, stalk removed and chopped
  • 1/2 cup heavy cream
  • nutmeg dash
  • red pepper flakes to taste

Instructions
 

  • Sauté sausage on medium heat in large pot until browned and cooked thoroughly. Add diced onion and garlic cloves and sauté until translucent.
  • Add 6 cups of water and Premium Chicken Better Than Bouillon paste and mix well. Add potatoes and simmer for 5-7 minutes.
  • Add beans, kale, nutmeg and red pepper flakes and mix well. Simmer for 2 minutes. Add heavy cream and mix well. Serve!

Paste mixes in easily without grittiness!

While this looks like a ton of kale, it cooks down to a surprisingly small amount.

    I don’t eat meat but I would love to try this without the sausage or with a vegan substitute. I bet the flavors are amazing.
