I went to the grocery store the other day and was so excited to see watermelons for sale everywhere. Watermelons are one of my favorite summertime treats and there’s nothing better than a sweet and juicy in season watermelon. In the summer months, we often eat watermelon daily. I love it simply by itself (although a sprinkle of Tajin is a great twist too), grilled, in salads and my absolute favorite, watermelon lime slushie.

Y’all know that our family loves all things slushies and smoothies (some of my favorite green smoothies that actually taste good can be found here). These watermelon lime slushies are so simple to make and absolutely perfect for a hot summer day. They use only 2 ingredients and a few minutes of prep time for quick summertime sip that you’ll be craving everyday. My kids love them as well and they can be made into delicious cocktails with a splash of vodka or tequila (add a splash of triple sec for the ultimate summertime cocktail that’s perfect for pool parties!

These slushies are especially a great way to use up watermelon that has a less than stellar texture as you won’t even notice once it’s blended. The lime juice adds the perfect note of citrus too! If you’re looking for a little extra sweetness, you can add a spoonful of sugar, but I really love the light and refreshing flavor of them with just the watermelon and lime. You can even add a few sprigs of mint or basil as well!

You won’t believe how easy it is to make these! Make sure to choose seedless watermelon for these drinks. (unless you want to spend a lot of time picking out all of the seeds). When I make these, I find it best to precut the watermelon into small chunks and then freeze it for a few hours in a large baggie (I love these reusable silicone bags LINK). While you don’t have to freeze the watermelon and can add ice to make it slushie, using frozen watermelon gives you more flavor with a less watered down taste than if you add ice. Once your watermelon chunks are frozen, simply pull out of freezer and let sit at room temperature for 5-10 minutes to slightly soften. Add watermelon and lime juice (and liquor if you want), blend and you’ll have a deliciously thick slushie to enjoy!

Ingredients
  

  • 4 cups watermelon cubed and frozen
  • 2 limes juiced
  • 1/4 to 1/2 cup water
  • 4 oz rum, vodka or tequila optional (add a splash of orange liqueur if you have it for extra yumminess)

Instructions
 

  • Remove watermelon from freezer 10 minutes before preparing.
  • Add all ingredients to blender and blend until smooth.
  • Pour into glasses and garnish with lime and mint!
