Confession: We’re kind of obsessed with Taco Tuesday in our house. I like to consider myself a master at mixing up taco night with all sorts of variations depending on our mood and this past weeks recipe was a major hit with everyone!
It was a cool and rainy day and our typical tortilla and meat taco fix just wasn’t sounding as satisfying as normal. I wanted comfort food and nothing soothes that craving like noodles! Thankfully, I always keep No Yolks Broad Noodles in our pantry since they are so versatile. When I saw them my mind started turning with fun ways to mix up our normal Taco Tuesday for a noodle inspired recipe.
This recipe blends together taco seasoned ground beef, festive veggies, yummy noodles and of course, finished with cheesy goodness. Â This recipe is so easy to do that your kids can even do it (with your help of course)! My son joined me in this dinner as the cutest sous chef and we had so much fun preparing it together. Involving your children in cooking is such a great way to teach them how to master basic kitchen tasks and for us it has been such a help when it comes to expanding our children’s palates. When kids are involved in the cooking process, I find that they become more adventurous and willing to try new flavors and ingredients.
The addition of noodles to this recipe made this a sure winner! Aiden couldn’t keep himself from eating noodles throughout most of our prep (as you can see). We’ve been No Yolks egg noodle users for a long time. I love that they are a healthier alternative to typical egg noodles and they always cook up firm, smooth and fluffy. No Yolks noodles are made from egg whites and are cholesterol free, low in sodium and fat, which is a major bonus for this health conscious home!

Taco Noodle Bake Casserole
Ingredients
- 1 1/2 pounds ground beef or turkey
- 1 onion diced
- 1 packet taco seasoning
- 1 Tbsp chili powder
- 1/2 Tbsp cumin powder
- 1 cup corn
- 4 ounce can diced chiles
- 1 can fire roasted tomatoes 14 oz., diced
- 4 cups broad egg noodles cooked
- 1 cup salsa
- 1/2 cup greek yogurt or sour cream
- salt & pepper to taste
- 1 cup shredded cheese
Instructions
- Preheat oven to 350 degrees. Boil water in a large stockpot to cook noodles. Cook noodles according to directions on package.
- In large skillet cook ground beef (or turkey) over medium heat until no longer pink. Drain grease.
- Stir in taco seasoning, chili powder, cumin powder, corn, diced chiles, and fire roasted tomatoes and simmer for 5 minutes.
- In large bowl, mix together egg noodles and meat mixture. Add in salsa and greek yogurt (or sour cream) and mix well.
- Pour mixture into greased baking dish. Top with shredded cheese. Bake at 350 degrees for 15 minutes. Let rest for 5 minutes and serve!
