Smoothie bowls are always one of my favorites for a quick breakfast, sweet snack or post-workout meal! This strawberry banana smoothie bowl is always a fan favorite and I love adding a generous handful of this super yummy vanilla almond protein granola for a delicious crunch!  I’m sharing the recipe below to make this addictively good granola so keep reading!

I love smoothies, but I need delicious toppings to make it feel like a meal to me. While I love the creamy and fruity consistency of smoothie bowls, my favorite part is all the toppings -the more the better! I love mixing it up with fresh fruit, seeds, nuts and my absolute favorite: granola!

This crunchy vanilla almond granola is so easy to make and the taste is out of the world! It uses simple ingredients like rolled oats, nut butter, and almonds and adding a scoop or two of protein powder is a great way to add an extra boost of protein and flavor! You can add other additions like puffed rice cereal for extra crunch and chia seeds for healthy fats.

Another reason that I love making my own granola is because you have more control of the ingredients used so it’s usually a healthier option and I’m able to make it have a lower sugar than most store-bought brands.

I’ve been using Biochem protein powder for awhile now (check out a recipe for amazing coffee almond protein balls here). Their protein powders are made with super high quality ingredients, taste delicious and are easily digestible. For this recipe, I used one of their plant-based powders, but you could easily substitute in any of their other varieties.

The key to a smoothie bowl is an ultra thick consistency. To make a super thick, creamy and spoonable smoothie bowl, there are a few important tips to keep in mind:

  • Use frozen fruit
  • Use a small amount of liquid
  • Add protein powder to help thicken and add a major boost of protein
  • Mix it up with toppings!

For this ultra creamy smoothie (similar texture to soft serve ice cream), I added 1/2 large frozen banana, 1 cup frozen strawberries, 1 scoop of Biochem Plant Protein and a splash of milk (you can use milk of choice). Blend until mixed and super thick! Add your favorite toppings and you’re all set. My fav topping is granola and I absolutely love this homemade vanilla almond protein granola! It’s so simple to make and great for adding to smoothie, yogurt or enjoying by the handful.

Instructions
  1. Preheat the oven to 325º. Lightly oil a large baking pan or line with parchment paper.
  2. In a small pan, heat almond butter and honey over medium heat until well mixed. Remove from heat and mix in vanilla extract.
  3. In a large bowl, mix together remaining ingredients. Pour honey/nut butter over the dry mix and mix well.
  4. Pour onto a baking pan. Spread across the pan. You can leave chunks together for larger granola clusters.
  5. Bake for 10 minutes. Flip and gently mix. Bake 10 more minutes until golden brown. Granola will be soft at first and become hard as it cools.
