Warm Kale Salad with Sweet Potato, Bacon and Egg
Although it's winter, it doesn't mean we're not still craving salads - we just don't want them cold. This warm kale salad with sweet potato, bacon and egg and a balsamic vinaigrette is a delicious addition to your fall and winter menu and packed with lots of roasted flavor and warmth.
Ingredients
- 6 cups kale chopped into ribbons
- 1 medium sweet potatoes diced
- 6 to 8 strips of cooked bacon crumbled
- 2 to 4 Great Day Farms Hard Boiled Eggs sliced
- 2 cloves garlic minced
- 2 Tbsp balsamic dressing
- 2 Tbsp dijon mustard
- 1/4 tsp dried rosemary
- salt & pepper to taste
Instructions
- Add olive oil to pan over medium heat. Sauté sweet potatoes until browned.
- Add garlic, kale and bacon and cook for several minutes until kale is dark green. Remove from pan.
- Combine balsamic dressing, dijon mustard, rosemary and salt and pepper and mix well.
- Drizzle dressing mixture on kale salad and mix well. Top with hard boiled eggs.
