Warm Kale Salad with Sweet Potato, Bacon and Egg

Although it's winter, it doesn't mean we're not still craving salads - we just don't want them cold. This warm kale salad with sweet potato, bacon and egg and a balsamic vinaigrette is a delicious addition to your fall and winter menu and packed with lots of roasted flavor and warmth.

Ingredients
  

  • 6 cups kale chopped into ribbons
  • 1 medium sweet potatoes diced
  • 6 to 8 strips of cooked bacon crumbled
  • 2 to 4 Great Day Farms Hard Boiled Eggs sliced
  • 2 cloves garlic minced
  • 2 Tbsp balsamic dressing
  • 2 Tbsp dijon mustard
  • 1/4 tsp dried rosemary
  • salt & pepper to taste

Instructions
 

  • Add olive oil to pan over medium heat. Sauté sweet potatoes until browned.
  • Add garlic, kale and bacon and cook for several minutes until kale is dark green. Remove from pan.
  • Combine balsamic dressing, dijon mustard, rosemary and salt and pepper and mix well.
  • Drizzle dressing mixture on kale salad and mix well. Top with hard boiled eggs.
