If your garden is growing herbs like crazy or your left with half a bundle of herbs, freezing herbs in olive oil is a great way to save them use later.
When ready to use, pull out a cube and add it to your dish. They can melt naturally or be sautéed into a dish.
Rinse herbs and pat dry. Chop or mince herbs as desired.

Place herbs into an ice cube tray, tightly packed.

Fill each well with olive oil until herbs are completely covered. Freeze 3 to 4 hours.

Remove from freezer and put into labeled freezer-safe bag. When ready to use, pull out what you need to melt or saute into dish.
