Ingredients

Pineapple Jalapeno Margarita

  • 6 ounce pineapple juice
  • 4 ounce Lobos 1707 Joven Tequila
  • 1 tbsp fresh lime juice around 1/2 juiced lime
  • 1-2 tbsp jalapeño simple syrup to taste, recipe found below
  • 1 cup ice
  • lime slices, fresh pineapple slices, jalapeño slices optional
  • tajin seasoning for rim optional. Can use course salt instead.

Jalapeno Simple Syrup

  • 3/4 cup water
  • 3/4 cup sugar
  • 1-2 jalapenos sliced

Instructions

Pineapple Jalapeno Margarita

  • Spread tajin (or salt) on a small plate. Moisten the rim of margarita glass with lime wedge and dip glass into tajin to line the rim of the glass. Fill glasses with ice.
  • Fill a cocktail shaker with ice and add pineapple juice, tequila, fresh lime juice and jalapeño simple syrup. Shake vigorously and strain into prepared glass.
  • Garnish with pineapple slices and jalapeño slices. Serve immediately.

Jalapeno Simple Syrup

  • Add water and sugar into small saucepan and bring to a boil.
  • Reduce to a simmer and add jalapeño slices. Simmer for 10-15 minutes.
  • Remove from heat and let cool. Sieve jalapeño slices is preferred. The longer the jalapeños sit in the syrup, the more heat and spice it will have.
