Boil penne noodles until al dente. Drain and set to the side.
In large pan, heat extra virgin olive oil over medium heat. Add red onion and bell pepper and sauté until tender (3-4 minutes).
Add spinach, pesto and StarKist E.V.O.O.™ Wild-Caught Yellowfin Tuna and cook until spinach has wilted (2-3 minutes). Turn heat off.
Add cooked noodles to pan with tuna, pesto and vegetables. Stir until noodles are coated and well mixed. Serve and top with parmesan.
