Warm Kale Salad with Sweet Potato, Bacon and Egg
Although it's winter, it doesn't mean we're not still craving salads - we just don't want them cold. This warm kale salad with sweet potato, bacon and egg and a balsamic vinaigrette is a delicious addition to your fall and winter menu and packed with lots of roasted flavor and warmth.

- 6 cups kale chopped into ribbons
- 1 medium sweet potatoes diced
- 6 to 8 strips of cooked bacon crumbled
- 2 to 4 Great Day Farms Hard Boiled Eggs sliced
- 2 cloves garlic minced
- 2 Tbsp balsamic dressing
- 2 Tbsp dijon mustard
- 1/4 tsp dried rosemary
- salt & pepper to taste
Add olive oil to pan over medium heat. Sauté sweet potatoes until browned.
Add garlic, kale and bacon and cook for several minutes until kale is dark green. Remove from pan.
Combine balsamic dressing, dijon mustard, rosemary and salt and pepper and mix well.
Drizzle dressing mixture on kale salad and mix well. Top with hard boiled eggs.
