2-3cooked chicken breastabout 3 cups; diced or shredded
17 ounce cangreen chiles diced
114 ounce candiced tomatoes
216 ounce cansBUSH'S Mild Kidney Chili Beansdo NOT rinse
1cupfrozen cornmay substitute with drained canned corn
12ounce low-sodium chicken broth
1Tbspchili powder
1Tbsp cumin
1/4tsp salt
1/4tsp oregano
1/4tsp paprika
1/4tsp black pepper
4ouncereduced fat cream cheesesoftened and cut into small cubes
Instructions
Add drizzle of oil to large pan over medium heat. Saute onions and garlic until transparent.
Add all remaining ingredients except for cream cheese to pan. Simmer for 10 minutes of medium-low heat and stir occasionally.
Reduce heat to low and add cream cheese. Mix often until completely melted into chili. Top with desired toppings (jalapenos, avocado, cilantro, tortilla chips).
