Taco Noodle Bake Casserole

Mix up your typical taco night and throw together this easy, yummy and most importantly quick casserole. This meal combines delicious seasoned taco meat, festive veggies, comforting noodles and topped with cheesy deliciousness. It's perfect for a busy weeknight dinner and you can prepare and freeze for a later time.

Ingredients
  

  • 1 1/2 pounds ground beef or turkey
  • 1 onion diced
  • 1 packet taco seasoning
  • 1 Tbsp chili powder
  • 1/2 Tbsp cumin powder
  • 1 cup corn
  • 4 ounce can diced chiles
  • 1 can fire roasted tomatoes 14 oz., diced
  • 4 cups broad egg noodles cooked
  • 1 cup salsa
  • 1/2 cup greek yogurt or sour cream
  • salt & pepper to taste
  • 1 cup shredded cheese

Instructions
 

  • Preheat oven to 350 degrees. Boil water in a large stockpot to cook noodles. Cook noodles according to directions on package.
  • In large skillet cook ground beef (or turkey) over medium heat until no longer pink. Drain grease.
  • Stir in taco seasoning, chili powder, cumin powder, corn, diced chiles, and fire roasted tomatoes and simmer for 5 minutes.
  • In large bowl, mix together egg noodles and meat mixture. Add in salsa and greek yogurt (or sour cream) and mix well.
  • Pour mixture into greased baking dish. Top with shredded cheese. Bake at 350 degrees for 15 minutes. Let rest for 5 minutes and serve!
