Banana Oatmeal Breakfast Cookies

Ingredients
  

  • 3 bananas medium, ripe
  • 1 1/2 cup rolled oats
  • 1/3 cup chocolate chips
  • 1/4 cup nuts pecans or walnuts are my fave
  • 1/2 tsp vanilla extract
  • dash cinnamon
  • pinch salt

Instructions
 

  • Preheat oven to 350ยบ. Line a cookie sheet with parchment paper.
  • Mash bananas in a medium bowl with the back of a fork until smashed and smooth. Add rolled oats, vanilla extract, cinnamon and salt and mix well.
  • Fold in chocolate chips and nuts until combined.
  • Scoop batter into heaping tablespoons and place on parchment paper. Use hands to form and flatten into cookie shape.
  • Bake for 15 minutes until firm and golden brown.
