This healthy greek egg salad is perfect for summer gatherings, BBQ’s and is a great option for a quick and healthy lunch or dinner in a pinch. Hard boiled eggs, garbanzo beans, ripe juicy tomatoes, crisp cucumbers, feta cheese and olives are tossed in a tangy homemade vinaigrette Greek dressing for the perfect make ahead side dish.

Ingredients
  

  • 1/4 cup plain Greek yogurt
  • 1 Tbsp red wine vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/4 tsp thyme
  • 1/4 tsp basil
  • 4 hard-boiled eggs chopped
  • 1 small tomato chopped
  • 1/2 cup cucumber chopped
  • 1/4 cup kalamata oilives chopped
  • 1/2 cup garbanzo beans drained well
  • 1/3 cup feta

Method
 

  1. Mix together greek yogurt, red wine vinegar and seasonings.
  2. Add in remaining ingredients and mix gently.
  3. Serving on top of spinach of spring mix, in a pita or whole wheat tortilla wrap.

Notes

Note: any combination of Italian or Greek seasonings work well in this recipe. It's very forgiving and customizable.
