This healthy greek egg salad is perfect for summer gatherings, BBQ’s and is a great option for a quick and healthy lunch or dinner in a pinch. Hard boiled eggs, garbanzo beans, ripe juicy tomatoes, crisp cucumbers, feta cheese and olives are tossed in a tangy homemade vinaigrette Greek dressing for the perfect make ahead side dish.
Healthy Greek Egg Salad
Ingredients
- 1/4 cup plain Greek yogurt
- 1 Tbsp red wine vinegar
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/4 tsp thyme
- 1/4 tsp basil
- 4 hard-boiled eggs chopped
- 1 small tomato chopped
- 1/2 cup cucumber chopped
- 1/4 cup kalamata oilives chopped
- 1/2 cup garbanzo beans drained well
- 1/3 cup feta
Instructions
- Mix together greek yogurt, red wine vinegar and seasonings.
- Add in remaining ingredients and mix gently.
- Serving on top of spinach of spring mix, in a pita or whole wheat tortilla wrap.
Notes
Note: any combination of Italian or Greek seasonings work well in this recipe. It's very forgiving and customizable.
