I’m sharing one of my favorite simple and flavorful sandwiches that’s been on repeat this grill season. Grilled Hawaiian chicken and pineapple sandwiches are super easy to make, take less than 30 minutes and oh-so-good for a yummy family dinner or BBQ! They are the perfect combination of sweet and smoky for a great summer inspired meal!
When it comes to dinner, the quicker and easier a meal is to make, the better. These sandwiches hit all the checkmarks and aim to please even the pickiest eaters. Grilled teriyaki marinated chicken and pineapple slices are sandwiched between chewy toasted Bays English Muffins, slathered with a sweet and spicy sauce, sharp Vermont cheddar cheese slices and topped with all the fixin’s! All these yummy and dynamic flavors come together for a sandwich that is perfect for a quick weeknight dinner or for serving at your summer BBQs!
I love substituting regular hamburger buns with Bays English Muffins in this recipe for several reasons! English muffins are a pretty big staple in our pantry for many occasions beyond breakfast and you can always find me adding at least a package or two into our cart while grocery shopping (you can find them in the dairy case chilled for freshness)!
First, I love the ultra crispy texture they get when toasted. With each bite you get a little crunchy goodness that just adds a special something to your meals, especially these sandwiches, as the sauce and cheese pool into the divots to lock in amazing flavors! Since these sandwiches can be a bit more like a slider thanks to the mouth-watering teriyaki sauce, Bays English Muffins are perfect to use as they are able to hold everything together without falling apart.
If you’re stuck in the mindset that English muffins are just a breakfast item, get creative and give them a try for dinner, lunch or snacks (these Southwest Shrimp, Bacon and Pineapple Pizza are so yummy). You can find lots of recipe ideas here.
The great thing about this recipe is that you can easily prepare a majority of it ahead of time if you know you’re going to be pressed for time by simply cooking your chicken and searing pineapple earlier. I love to allow my chicken to marinate overnight in a tangy teriyaki sauce for an extra pop of flavor if possible, but if not, simply baste once or twice with teriyaki sauce when grilling (or pan frying or baking). Grilling or searing the pineapple brings out a deep, sweet flavor that really adds something special to this sandwich! The teriyaki mayo sauce provides a pop of flavor and you can add a little heat with a generous addition of red pepper flakes!
Once you have your main ingredients all prepared, it’s simply a matter of stacking them atop your pre-sliced Bays English Muffins, adding sauce and having yourself a darn-good meal!
Grilled Hawaiian Chicken and Pineapple Sandwiches
Ingredients
- 4 chicken breasts
- 1/2 cup Teriyaki sauce
- Pineapple slices in juice or fresh
- 4 Bays English Muffins
- 4 sharp cheddar sliced (Sharp Vermont is my favorite)
- tomato sliced
- red onion sliced
- romaine leaves
Teriyaki Mayo Sauce
- 3 Tbsp mayo
- 1 1/2 Tbsp teriyaki sauce
- 1/2 tsp red pepper flakes optional and can be varied depending on heat preferred.
Instructions
Sandwiches
- Marinade chicken for at least one hour prior to cooking. Prepare Teriyaki mayo.
- Preheat grill to medium heat. Grill chicken until fully cooked and thermometer reads 165º.
- Grill pineapple on grill for several minutes on each side.
- Toast your English muffins until browned (either in grill, via broiler or toaster).
- To assemble sandwich, smear a generous amount of teriyaki mayo sauce on one half of muffins. Place cheese on other side.
- Layer chicken, pineapple, tomato, red onion and romaine leaves. Add more sauce if desired and serve immediately!
Teriyaki Mayo
- Combine mayo, 1 tablespoon teriyaki sauce and red pepper flakes. Mix well.
