Cool breezes, falling leaves, pumpkins everywhere. Sounds like the perfect fall picture, but there is one thing that’s missing: Comfort Food.
Undoubtedly, one of my favorite things about this time of year is all the savory and tasty comfort foods. There is nothing better, than to be bundled up in a warm sweater, sitting by the fireplace and enjoying one of my favorite foods: Macaroni and Cheese.
Macaroni and cheese is amazing on it’s own, but I love mixing in other ingredients to spice it up too. When it comes to macaroni and cheese, I always turn to Annie’s Homegrown Organic Shells and Real Aged Cheddar Macaroni and Cheese. It’s no surprise to my loyal readers that I’m an Annie’s fan as I’ve praised Annie’s before, but I love that many of their products are now certified organic as well. Their certified organic goodies, allow me to de-junk my kitchen, while still providing easy and delicious meals for my family. Eating organic has never been so easy or yummy with the help of Annie’s Homegrown (see their cute video). One of my recent favorite ways for preparing Annie’s Organic Shells and Real Aged Cheddar Macaroni and Cheese, is my cheesy macaroni and ham pie casserole. It’s full of so much flavor, added protein, veggies and is a perfect meal to warm you up on a cool day.
Cheesy Mac & Cheese Ham Pie Casserole
Ingredients
- 2 6 ounce box Macaroni & Cheese
- 2 cups broccoli florets
- 1 cup diced ham
- 2 Tbsp butter
- 4 eggs
- 1/2 cup cheddar cheese shredded
- 3 Tbsp milk
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1 Tbsp minced onion
Instructions
- Preheat oven to 350. Bring water to boil and add macaroni noodles. Cook according to box (usually 8-10 minutes).
- In the last 2 minutes of pasta boiling, add broccoli florets. Drain noodles and broccoli. Pour noodles and broccoli back into pan and mix in butter.
- In separate bowl, whisk eggs, milk, garlic powder, and pepper. Once whisked, add in powdered cheese packets from mac n cheese boxes.
- Add whisked ingredients to pasta and broccoli. Add ham, shredded cheese and minced onion. Mix well.
- Oil a 9 inch pan or casserole dish. Pour entire contents into pan/dish and bake for 30 minutes or until the middle is set and top is golden brown.
