Southwest Chicken Salad

- 4 chicken breasts heavily seasoned with garlic, onion, paprika, salt and pepper
- corn on the cob shucked
- 1 can black beans rinsed well
- mixed greens I like to use spinach and romaine
- orange or red pepper sliced
- red onion sliced
- cherry tomatoes sliced
- cucumber sliced
- Chipotle Lime Dressing see recipe above
Turn grill onto medium heat.
Drizzle oil on corn on the cob.
Grill chicken and corn on the cob until done (chicken internal temperature of 165ºF).
Cut corn off of cob.
Arrange salad with remaining ingredients and drizzle with dressing.
