Phew! Why did no one warn me how crazy and intense the first few weeks of school are? This is the first year of both my kiddos being in school and the morning hustle to get everyone out the door feels like a whirlwind somedays. From the moment we wake up it’s go, go, go! I’ve been trying to be a bit more mindful about my meat intake and love participating in Meatless Monday when I can. Evol Portabella & Goat Cheese Ravioli is such a great fast and delicious vegetarian meal (with nothing artificial in it)! My husband is a huge mushroom fan, so when he saw these stocked in our freezer he was all over it.
