I seriously love the versatility of grilling in the summer months. One of the hardest things about the summer to fall transition here in the midwest is not being able to grill comfortably year-round. Every year we stretch our grilling season longer and longer, even if that means donning a coat and hat to extend our grilling season.

These grilled chicken tacos with cilantro lime slaw is one of my absolute favorite meals! Not only are they super easy to make, but a great healthier taco alternative. Since we try to eat pretty mindful so I love experimenting with recipes & products to find ways to lighten up our favorite meals. The kids even love this one! And no worries – if grilling isn’t available: sauté the chicken breast in a skillet for similar results (this cast iron skillet pan is my ride-or-die kitchen necessity).

The chicken for the tacos is pretty straightforward and only requires a little bit of prep. If I have time, I love to let the chicken marinade for several hours in a taco mix, lime juice and oil marinade to really let the flavors soak in. If I’m short on time, I simply season heavily with a taco mix and drizzle with lime juice. I highly recommend going the marinade route as it helps create an ultra juicy, flavorful and tender chicken.

The zesty coleslaw is so delicious for this meal! Seasonal cilantro, bright and zesty lime is a fabulous topping on these chicken tacos and embody all those yummy summertime flavors. Another great way to use this coleslaw is on fish or shrimp tacos for a burst of citrus flavor!

Ingredients
  

Chicken Tacos

  • 2 to 3 chicken breasts butterfly cut
  • 1 packet taco seasoning or make own
  • 1/4 cup lime juice
  • tortillas

Cilantro Lime Coleslaw

  • 16 oz bag of coleslaw mix
  • 1/2 cup Greek yogurt
  • 1/4 cup cilantro packed
  • 2 cloves garlic
  • 4 stalks green onions
  • 1/2 jalapeno cored (includes seeds for extra spice)
  • 3 tbsp lime juice
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • 1/4 tsp salt

Instructions
 

Chicken Tacos

  • Marinade chicken breast in lime juice, oil and taco seasoning for 2 to 4 hours.
  • Preheat grill to medium high heat. Cook chicken breasts for 5-6 minutes on each side until cooked thoroughly (internal temperature of 165ºF).

Cilantro Lime Coleslaw

  • Add all ingredients except for coleslaw mix into a blender or food processor. Pulse several times until well mixed and chopped.
  • Add mixture to coleslaw mix in a medium bowl prior to serving.
  • Top tacos with cilantro lime coleslaw.
