Rustic Sausage, Kale and Potato Soup

Ingredients
  

  • 1 pound Spicy Italian Sausage optional: can use regular Italian Sausage
  • 1 onion diced
  • 2 garlic cloves minced
  • 6 cups water
  • 2 Tbsp Premium Chicken Better Than Bouillon
  • 2 sweet potatoes halved and sliced 1/4" thick
  • 1 russet potato sliced 1/4" thick
  • 1 can northern beans rinsed and drained
  • 4 cups kale raw, stalk removed and chopped
  • 1/2 cup heavy cream
  • nutmeg dash
  • red pepper flakes to taste

Method
 

  1. Sauté sausage on medium heat in large pot until browned and cooked thoroughly. Add diced onion and garlic cloves and sauté until translucent.
  2. Add 6 cups of water and Premium Chicken Better Than Bouillon paste and mix well. Add potatoes and simmer for 5-7 minutes.
  3. Add beans, kale, nutmeg and red pepper flakes and mix well. Simmer for 2 minutes. Add heavy cream and mix well. Serve!
