Lately there has been so much buzz and chatter about self-love. I’m so incredibly happy and grateful that our society is starting to see how important it is to value our health and how it has such an impact on so many areas of our lives. When it comes to self-love, I’m a strong proponent for looking beyond the bathtub and bubbles and finding simple, everyday ways of nurturing your body and soul. One of my absolute favorite ways to “nurture” self-love is with cooking and eating wholesome, fresh foods.

I find that taking the time to prepare healthy, nutritious foods for myself (and my family) is cathartic and I always get a boost when I put together a gorgeous, colorful plate of food. I love following my “gut” and creating recipes and meals based on what my body is craving and the act of taking a few moments to arrange a beautiful plate of food just seems to elevate a meal and make it more special. Fueling your body with healthy, nutritious, wholesome foods is so important to your overall health and wellness.

Over the summer, one of my favorite meals to prepare are fresh and vibrant salads. My all-time favorite summer salad is hands-down this Southwest salad with chipotle lime dressing! It’s so incredibly easy to prepare and has so many delicious summer flavors. Fresh produce from the garden or farmers market (I especially love adding some blackened, grilled corn), grilled protein and a spicy dressing makes this a weekly meal in our home! The shining star of this salad is the tangy and spicy chipotle lime dressing! The best part is that it is incredibly easy to make in just under 5 minutes with just a few simple and wholesome ingredients.

The base of chipotle lime dressing is FAGE Total 2% Plain Greek yogurt which provides a tangy flavor and allows this dressing to be a great lower fat, protein-rich creamy dressing (you can even substitute with FAGE Total 0% to cut calories and fat even more). One of my favorite kitchen hacks is using FAGE Greek yogurt when making homemade dressings and dips (you can find lots of other unique Greek yogurt uses here). FAGE is always stocked in our fridge for adding a punch of protein to our meals, great for a quick snacks (love the Split Cups as they have 30% less sugar) and I love that it’s only made with milk and live active yogurt cultures.

This dressing will quickly become your new favorite summer salad dressing that will quickly become a fridge staple! It can even be modified into a dip (just omit the milk in the recipe) for dipping veggies or chips. Whether I’m drizzling it on a salad, over grilled veggies, on tacos or for dipping, it’s oh-so-delicious!

Chipotle chiles in adobo sauce give it a rich, deep flavor that is so good with grilled proteins (chicken, steak or shrimp are all great on this salad and with this dressing), while lime & cilantro gives it a summer vibe. Greek yogurt pulls it all together for a lip-smacking dressing!

Southwest Chicken Salad

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes
Course Grilling, Main Dish
Servings 4 people

Ingredients
  

  • 4 chicken breasts heavily seasoned with garlic, onion, paprika, salt and pepper
  • corn on the cob shucked
  • 1 can black beans rinsed well
  • mixed greens I like to use spinach and romaine
  • orange or red pepper sliced
  • red onion sliced
  • cherry tomatoes sliced
  • cucumber sliced
  • Chipotle Lime Dressing see recipe above

Instructions
 

  • Turn grill onto medium heat.
  • Drizzle oil on corn on the cob.
  • Grill chicken and corn on the cob until done (chicken internal temperature of 165ºF).
  • Cut corn off of cob.
  • Arrange salad with remaining ingredients and drizzle with dressing.

Chipotle Lime Dressing

Servings 10 ounces

Ingredients
  

  • 7 ounce container FAGE Total 2% Plain Greek Yogurt
  • 1/2 cup cilantro loosely packed
  • 1-3 chipotle peppers in adobo sauce adjust for preferred spiciness
  • 1/2 lime juiced
  • 3 Tbsp milk
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1 tsp honey

Instructions
 

  • Add all ingredients into food processor or blender. Mix until smooth and blended.

Notes

Note:
Keep refrigerated and good for up to 7 days.
Spiciness can be adjusted to taste. More chipotle peppers will lead to a spicier dressing! Add one at a time until desired heat is reached.
