This super simple salad is so easy, yet so tasty! Avocado is used to replace the typical mayonnaise that is used in chicken salads and gives this recipe such great flavor and makes it such a healthier option! The addition of grapes/apples, gives a sweet punch of flavor that complements the other ingredients so well!

Healthy Avocado Chicken Salad

Ingredients
  

  • 2 cups chicken breast shredded or diced and chilled
  • 1 large avocado (or 2 small) mashed
  • 1/4 cup celery diced
  • 1/2 cup apple or red grapes diced
  • 1 Tbsp green yogurt
  • 1 Tbsp red onion diced
  • 2 tsp lime or lemon juice
  • 1/4 cup roasted almonds chopped or slivers
  • salt and pepper to taste

Notes

This salad can be eaten alone, served on toasted bread, a croissant, in a whole wheat tortilla or served atop a spinach salad.
For a twist, prepare with the addition of chili powder, cumin and paprika for a Mexican twist!
