I’m always on a quest to find more snacks ideas to add to our pantry. We’re a household of grazers so snacks are a must for us and it’s always a bonus when they are healthy too. It’s even better when they are super simple to make and the kids gobble them down which is why I’ve been loving these Savory Italian Garlic Nuts.

These nuts are seriously addictive! So much so, that I had to hide them from my two and four year old so they wouldn’t eat the whole batch in one serving. With that said, it might be worth it to make an extra batch to have ready to go because they’re a hit with the whole family. Aside from a tasty snack, they’d be perfect for a charcuterie board or even packaged up in cute little jars as a holiday gift.

These almonds are roasted and seasoned with a trifecta of rosemary, spices and avocado oil for a bold taste. While I used almonds in this recipe, you could substitute with any nut of your choice or do a mixture (almonds, cashews, walnuts, pecans, pepitas would all be wonderful) as well as substitute your oil of choice. I most often use a variety of nuts from NOW Foods as they have a huge selection and they consistently taste great.

Confession time: I don’t like olive oil.

I know, olive oil is a staple for most people, but I just never could find one where I really loved or enjoyed the flavor. I switched over to using avocado oil about a year ago and never looked back. The great thing about avocado oil is that it has a high smoke point (so the oil doesn’t break down at high temperatures so you can reap all the great health benefits) and a mild taste which makes it so versatile for everyday cooking (from sautéing, to baking, to using in salad dressing or marinades).

Avocado oil is pressed from the meaty area that surrounds the pit of an avocado. Avocado oil is loaded with many of the same great benefits that you get from avocado, yielding an oil full of healthy monounsaturated fats, including oleic acid and essential fatty acids. Monounsaturated fats are a much healthier option, especially when used to replace saturated and trans fat in your diet, as it can have a beneficial effect (when eaten in moderation) on blood pressure and your heart. I love using Ellyndale Naturals Avocado Oil (from NOW Foods) for a majority of my cooking as the flavor is perfection.

Savory Italian Garlic Nuts

Addictively good! These savory roasted nuts are roasted and seasoned with a trifecta of rosemary, spices and avocado oil for a bold taste. While I used almonds in this recipe, you could substitute with any nut of your choice or do a mixture (almonds, cashews, walnuts, pecans, pepitas would all be wonderful) as well as substitute your oil of choice.

Servings 2 cups

Ingredients
  

  • 2 cups raw almonds or nuts of choice
  • 1 Tbsp avocado oil or oil of choice
  • 1/2 tsp salt
  • 2 tsp fresh rosemary sprigs finely chopped
  • 1 tsp italian seasoning
  • 1/4 to 1/2 tsp garlic powder to taste

Instructions
 

  • Preheat oven to 350 degrees.
  • In small bowl mix oil, seasonings and rosemary together.
  • Drizzle oil mixture over almonds and mix. Pour nuts onto baking pan lined with parchment paper.
  • Bake for 12-14 minutes until almonds are toasted. Stir halfway through.

Notes

Note: Almonds will continue to roast after you remove them from the oven so don't let them bake too long.
