Grilled Yogurt Flatbread | Pesto Margherita Pizza

In our home we really love pizza and it’s pretty common that we have a pizza night once a week. Sometimes we have traditional pepperoni and cheese and other nights we get more creative. Lately this grilled flatbread pesto margherita pizza has been a family favorite!

I love gathering the kiddos into our kitchen and working together as a family to prepare our meals. Having your kids involved in the kitchen has so many benefits and I think that it’s been super helpful in expanding our kiddos palettes as well as being more mindful and appreciative of the food that we eat. One of my favorite ways to show love to my family is cooking delicious homemade meals. There’s something so cathartic and nurturing about getting creative in the kitchen and letting love flow through preparing a meal. Many of my favorite memories as a child were those spent around the kitchen table eating homestyle meals and I think that I often want to replicate that feeling for my children.

Finding ways to infuse love through cooking doesn’t have to be fancy or overly intricate. Some of the most simple meals can feel loving when it includes comfort and favorite foods. For me, flatbread pizza is one of those meals. We all can get our hands dirty, laugh and be silly as we prep a fun family dinner that everyone enjoys.

One of our favorite crusts to use when making homemade pizzas is Greek yogurt flatbread!  This flatbread is super quick to make, absolutely delicious and is made with 3 simple wholesome ingredients: FAGE Total 2% Plain Greek Yogurt, flour and baking powder. This flatbread is reminiscent of naan bread and super versatile too. While we use it for personal pan pizzas, it’s great when cut into triangles for serving with dips or hummus, topped with Greek yogurt and fresh fruit or to use as pitas for chicken salad sandwiches.

When my kids find out that grilled Greek yogurt flatbreads pizzas are on the menu that evening, they all coming running to the kitchen. They love helping to measure out the ingredients and their favorite part is getting their hands into the doughy mix. Sure, it’s messier, but it’s worth the smiles and giggles.

When I make the flatbread for our pizzas, I often double the recipe as this flatbread lasts well when refrigerated. I always use FAGE Total Plain Greek yogurt as it’s a staple in our home. Whether we’re using it for snacking on rich and creamy great-tasting yogurt bowls, making ice cream sandwiches or another unique way to use yogurt, it’s definitely one of the most used ingredients in our home.  FAGE Total Greek yogurt is made with only milk and live active milk cultures (with no added sugars) and is a great way to add some all-natural protein-rich goodness into this recipe for grilled flatbread.

Instructions
  1. Combine Greek yogurt, flour and baking powder in large bowl.
  2. Flour hands and mix and knead well until it forms into a ball.
  3. Let dough sit for 15 minutes.
  4. Separate dough into 4 equal pieces. Heat grill or pan to medium heat.
  5. Using hand or rolling pin, flatten dough into 1/4" round flatbreads. Brush olive oil on bread with brush or hand.
  6. Cook 3-4 minutes on each side until bubbly and browned.

Today I wanted to share one of my all-time favorite pizza combinations: Grilled Flatbread Pesto Margherita Pizza! While traditional margherita pizza is made with a tomato sauce, we occasionally substitute a pesto sauce and it adds so much delicious flavor to this pizza. This is a perfect pizza for taking advantage of this seasons fresh tomatoes & basil too. When made on this grilled yogurt flatbread, it gets the crispiest crust that satisfies with every bite!

  1. Preheat oven to 400º
  2. Top flatbread with pesto sauce, fresh tomato, and mozzarella.
  3. Bake 10 to 15 minutes until cheese is melted and bubbly.
  4. Top with fresh basil. Enjoy!
